Green Tea Shortbread/Cookies - Heart-shaped cardamom and cinnamon chai shortbread cookies with flecks of green tea; crispy, crunchy, melt-in-your-mouth eggless cookies made healthy with multigrain flour!
Christmas is almost here and this is the perfect healthy sweet treat to share with family and friends!
I love baking (as you all know by now) and am always looking for quick and easy sweet treats but with a healthy twist!
This super quick shortbread comes together in no time, not counting the time the dough needs to chill in the refrigerator!
On my recent trip to US, I had got these cute heart-shaped cookie cutters and was dying to use them; these short breads were perfect to start with. If you do not have these heart-shaped cutters, you can cut them into rounds using any jar or bottle lid or even roll them into logs, wrap in plastic, chill for at least 8 hours or even overnight, slice and bake!
Most short breads are made with flour, butter and sugar and with a large packet of multigrain flour in my pantry, I dared to use this instead of plain flour in my shortbread, with my fingers crossed!
With green tea and matcha flavors doing the rounds in various bakes, I decided to stir in some crushed green tea in the cookie and to make it more of a masala chai flavor, stirred in some cinnamon powder and cardamom powder!
Once the cookies were rolled, cut out and baked, the aroma filling the house was amazing!
I could not wait for them to cool down to take a bite out of them.
They turned out so crispy, buttery and light (despite the multigrain flour in them)!
With only ½ cup of sugar (in 34 cookies!), they turned out mildly sweet; just the way I love them. You have to try these!
My love for chocolate could not keep me from tinkering with this cookie too!!
I melted some dark chocolate and dipped half of the cookie and sprinkled some colored sprinkles for a festive Christmas fervor! They turned out so gorgeous and tasty.
So, with just a few days left for Christmas and holidays, you can churn these out with ingredients I am sure already in your pantry and serve them to family and friends at get togethers or give them as edible gifts to your loved ones!
How to make Green Tea Shortbread/Cookies:
Cream butter, sugar, green tea powder (blitz green tea leaves to a coarse powder), cinnamon powder, cardamom powder and salt until fluffy; about 2 minutes with a beater.
Stir flour in batches and on low speed until totally incorporated, or better yet by hand or using a spatula, and just mixed; do not over work the mix.
Remove and bring together to form a soft dough, handling it gently.
Divide into 2 and wrap in plastic wrap; chill in refrigerator for at least 15 minutes to half an hour.
Once the dough has chilled, preheat oven to 350 F or 180 C.
Lightly grease a baking pan and keep aside.
Take out one dough ball and roll in between 2 parchment sheets with a rolling pin to about ¼” thickness.
Cut out heart shapes with a heart shaped cookie cutter.
Gently remove the cut out cookies, and place on greased sheet. Collect the leftover dough and form a ball again; chill again if necessary.
Bake for 12 to 15 minutes until light golden at the edges.
Continue doing the same with the rest of the dough.
Remove from oven and let cool on pan for a minute or two (the cookies will still be soft).
Cool completely on wire cooling rack.
At this stage, enjoy the buttery, chai flavored shortbread or cookies as such
Or to make them more decadent, dip them in melted chocolate (melt chocolate in microwave or double boiler) halfway and sprinkle colored sprinkles on top of the chocolate and place on parchment-lined pan.
Let the chocolate set either in the fridge for quick setting or on the counter.

Notes
Instead of multigrain flour, you can use all-purpose flour or whole wheat in these cookies.
Use any kind of spice you love and enjoy these eggless and healthy shortbreads any time!
If you do not have a heart-shaped cookie cutter, you can use any cutter you have.
Instead of rolling the dough and cutting them out, you can form the dough into 2 logs, wrap in a plastic wrap and chill at least 4 to 8 hours or even overnight and just before baking, cut into equal slices and bake.
While one batch is baking, keep the unused dough in the fridge until ready to bake.
