Tropical Layered Smoothie (Vegan/Sugar Free)

Tropical layered smoothie; a multilayered, multi-flavored gorgeous glass of coconut milk, sugar free smoothie made with tropical fruits like mangoes, pineapple and strawberries!

It already feels like summer in many parts of the world, but where I live, there is still a nip in the air. My evening walks still need a jacket to keep me from shivering from the cold winds! That hasn't stopped me from enjoying a lovely glass of healthy, smooth and creamy glass of multi-layered fruit smoothie!

Strawberries are always in my fridge and during my last trip to the grocer, I had got some gorgeous mangoes (yay; mango season!!) and a large pineapple. I have never had a smoothie (yes, I am one of those skeptical about thick drinks and am more of a fairly thin milkshake kind of girl!) but have always enjoyed a tall glass of lassi!

But today, the opened can of coconut milk in my refrigerator, after adding a bit to the Shahi Paneer Butter Masala I had prepared recently beckoned me to use it all up before it went bad.

Some time back, I had come across a lovely multi-layered smoothie in Sunset magazine and had been wanting to make something like that soon; now was the time to indulge in my creative cooking skills!

With summer here and everyone reaching out for something cool, refreshing and healthy, nothing like a fruity tropical layered smoothie which is gorgeous enough to serve at any party too!

Layering needs a firm mixture of smoothie, so I proceeded to prep my fruits by peeling, slicing and freezing them (over butter paper-lined pans) for about 15 minutes. You can add ice cubes instead to the smoothie, but this will dilute the flavor and texture of the drink. Coconut milk was already chilled.

You need a tall clear glass to start layering the gorgeous layers of strawberry, mango and pineapple smoothies! If you feel the fruits are not too sweet, add some sugar or agave nectar (if vegan) to sweeten according to taste.

The slightly impatient part (before you slurp on these gorgeous, healthy and luscious smoothies) is waiting for each layer to freeze and set before you pour the next layer. If they are too dilute, there are chances the top layer may mix into the bottom layer; so be patient if you want a show-stopper layered smoothie!

Once the fruity, tropical beverage/smoothie was ready, it took no time for me and my family to empty the two glasses! Add my name to the list of smoothie lovers people!

So, hop onto the smoothie bandwagon and make healthy and fresh smoothies with whatever fruits you have. Make it multilayered and wow your family with your creative skills or make individual flavored smoothies instead.  This is a perfect and fun way to make your kids have their daily fruits.

This drink can be made using milk or yogurt also if you prefer and if you are not vegan. So, blend one up today and enjoy a cool summer!

Tropical Layered Smoothie (Vegan and No added sugar)

A multilayered, multi-flavored gorgeous glass of vegan, fresh coconut milk smoothie made with tropical fruits like mangoes, pineapple and strawberries for added flavor and color!

Ingredients

    For the strawberry layer:
  • 1 ½ cups sliced strawberries
  • ½ a large banana, peeled and sliced
  • ½ tsp lemon juice
  • Lemon zest
  • ½ cup coconut milk
  • For mango layer:
  • ½ cup coconut milk
  • 1 large mango, cubed
  • ½ a large banana, peeled and sliced
  • Few saffron strands, soaked in a little water (optional)
  • For pineapple layer:
  • 1 cup pineapple cubes frozen
  • 1 small banana, peeled and sliced
  • ½ cup coconut milk
  • Mint leaves, strawberries and chopped fruits for garnishing

Instructions

  1. Peel and cut the strawberries, mangoes, pineapple and bananas and spread on butter paper or parchment paper lined pan to freeze for about 15 to 30 minutes.
  2. To make the bottom strawberry layer:
  3. Remove the frozen or chilled fruit slices from the freezer.
  4. Combine sliced strawberries, half a banana, coconut milk, lemon juice and some lemon zest in a blender.
  5. Blend to a smooth paste; you may have to do it in small bursts as the fruits are frozen.
  6. Divide strawberry smoothie between 2 glasses; it is easier to spoon them to form perfect layers, smoothening the top as you go.
  7. Return the glass to the freezer to set the bottom strawberry layer, for about 30 minutes.
  8. To make the middle mango layer:
  9. Combine mangoes, ½ a banana, coconut milk and saffron infused mixture and blend to a smooth puree.
  10. Layer this on top of the frozen strawberry layer, leveling the top. Freeze another 30 minutes.
  11. To make the pineapple layer:
  12. Combine pineapple, banana, and coconut milk in a blender and make a smooth puree.
  13. Remove the frozen smoothie glass from the freezer and layer this mixture gently over the second mango layer and level again.
  14. The layering of the smoothie can be made easier if you spoon the mixture into the glass.
  15. Serve immediately or chill for another 5 to 10 minutes and serve with a straw.
  16. Enjoy!

Notes

Add some honey if the mangoes and pineapples are not too sweet. For a vegan option, use sugar or agave syrup to sweeten the smoothie.

Keep frozen fruits ready in the freezer and this smoothie can be ready in no time.

If you do not want to layer the smoothies, enjoy the fruit smoothies separately as strawberry smoothie, mango and pineapple smoothies!
