Sorry friends, I have been a very passive food blogger the past month. Lots of exciting things happening on the family front which kept me busy and happy!!! My children were visiting after a long time and it was a marathon of cooking their favorite dishes…brownies was first on their list!!
I cannot remember how many times I have made these fudgy treats in the past few decades but never got to click them. Now I get to share this easy, quick and one bowl treat with all of you!!! For a healthier twist, I decided to do away with all-purpose flour/maida altogether. Instead, the addition of whole wheat flour (which is way better for you) made these totally guilt free!!!
All previous versions had too much sugar so I experimented using less sugar; the sweetness was just right. Chocolate and coffee are a match made in heaven; the whole chocolate experience is elevated to a new height!! So while mixing the brownie batter, my hand migrated towards the bottle of instant coffee powder lying on the counter, and viola, the humble simple chocolate brownie became a mocha dessert of decadence!!!!
We all know, most cakes and cookies have eggs added to them. To get a fudgy brownie, eggs are a must. So, in this recipe, I could not avoid them. The past few years, making eggless bakes has fascinated me and every time I bake, I have started using egg substitutes like yogurt, cornstarch etc. An eggless fudgy brownie version is next on my to-do list.
Do try these decadent, fudgy, melt-in-your-mouth chocolate brownies (adapted from Hershey’s) today. Enjoy them with a cup of coffee or a glass of milk. For a party highlight, serve it as a dessert with a dollop of vanilla ice cream and drizzle of chocolate sauce!!!

Decadent, fudgy, melt-in-your-mouth whole wheat chocolate brownies; a perfect snack/dessert!
Ingredients
- 1 cup unsalted butter, melted
- 1 ¾ cups sugar
- 2 teaspoons vanilla essence/extract
- 4 eggs (at room temperature)
- ½ cup cocoa powder (I have used Hershey’s)
- 1 teaspoon of your favorite instant coffee powder
- 1 ¼ cups whole wheat flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit/180 degrees Centigrade.
- Line a lightly greased (helps in keeping the foil in place) 13x9 inch pan with aluminum foil. Grease again with butter or ghee and dust with whole wheat flour; tap out the excess and set aside.
- Sift whole wheat flour, baking powder and salt or just mix using a whisk.
- Melt the butter completely in a microwave or over a stove on very low heat.
- In a large mixing bowl, add the sugar and vanilla essence to the melted butter and beat well for a couple of minutes.
- Break one egg into the mixture and mix again. Continue with the rest of the eggs, beating well after each addition.
- Add the cocoa powder and instant coffee; beat again to mix well.
- Tip in the flour mixture and blend to incorporate the flour well into the butter-sugar-egg mixture.
- At this stage, you may prefer to stir in some chocolate chips or chopped nuts.
- Pour into the prepared pan and spread evenly with a spatula. Tap the pan to get rid of air bubbles.
- Sprinkle chocolate chips (as much or as little as you want) over the batter evenly.
- Bake in the preheated oven for 30 to 35 minutes until the brownie begins to pull away from the sides of the pan and a toothpick inserted in the center comes out clean.
- Remove from the oven and place on cooling rack.
- Cut into even sized pieces when completely cool and serve with a glass of cold milk, hot coffee or with a dollop of your favorite ice-cream!!
Notes
If you like nuts in your baked good, you can add your favorite nuts coarsely chopped.
For more chocolate in every bite, feel free to add more chocolate chips in the batter.
Use a sharp knife to cut your brownies into neat pieces.

Yes, you can halve the recipe but use a smaller pan.
I have not weighed the ingredients but will have to rectify that soon.
