Chocolate Almond Crunch with layers of crunchy coffee flavored crust with whole wheat, topped with chocolate and almonds is a sure fire way to satisfy your sweet tooth any time. They make great mid morning snacks or perfect edible gifts to your loved ones.
I can never get enough of chocolate. My pantry is always stocked with bars of chocolate, be it white, dark or milk chocolate and even cocoa powder. When the urge to eat something chocolaty hits me, all I need to do is fish out my favorite chocolate recipes and pick one. My favorite ones are the easy and quick ones like Nutella filled chocolates, Marbled No-Bake Chocolate Peanut Butter Bars, Chocolate Bark etc.
The last time I had made my double chocolate brownie bars, they came out so scrumptious, my whole family was digging into the cookie jar for a bite of this dessert. Last week, while I was rummaging through my huge collection of recipe books, a piece of paper slid out of one of them.
I found something written on them. It was a recipe for chocolate almond crunch bars which I had noted a few years ago and was lost in my books. Earlier, I used to just write down the recipes without noting the source; so, I have no idea where I got this one.
The whole recipe sounded so easy and healthy with whole wheat and chocolate with nuts (my favorite combo), I decided I had to make these soon.
You don’t need to be an expert baker to make these. Just melt some butter and mix in whole wheat flour and sugar with some salt. For the coffee lover in me, I added some instant coffee powder. Spread in a pan and bake until golden brown; baking done!
Now, just sprinkle your favorite flavor of chocolate (white, dark, milk or a combination) over the hot crust and wait for a few minutes (hmm, tough part!) to allow the chocolate to melt. Once you see that the chocolate is soft enough, spread all of its melting goodness gently and evenly over the crust and up to the edges; immediately sprinkle your favorite kind of nuts (could be almonds, peanuts, cashew, hazelnuts etc.) all over the chocolate; that is it!
Now the toughest part is waiting for the chocolate to set over the crust; about 10 to 15 minutes, before you can begin to cut them. Once it is set, cut into desired shapes or just break them into rough pieces.

Ingredients
- ½ cup butter, melted
- 1 cup whole wheat flour
- 1 tsp coffee
- ½ cup brown sugar
- ¼ teaspoon salt
- ½ cup chocolate chips
- ¼ cup chopped or slivered almonds
Instructions
- Prepare an 8 inch by 8 inch pan. Either grease it lightly or line with foil with its ends extending over the sides to have ease in removing the bars from the pan.
- Preheat oven to 350 degrees Fahrenheit or 180 degrees Centigrade.
- In a mixing bowl, combine whole wheat flour, brown sugar, coffee powder and salt with a wire whisk or spoon.
- Add melted butter and mix well with spoon or hand to a crumbly mixture. Blend thoroughly.
- Spread the crumbly butter flour mixture in the prepared pan. Using your hands or with the back of a spoon, gently press the crumbs evenly and firmly to form a tight base all over the bottom of the pan.
- Bake in the preheated oven for about 15 to 20 minutes until light golden brown.
- Remove from oven and immediately sprinkle chocolate chips all over the hot crust.
- Let stand about 3 to 5 minutes to allow the chocolate to soften.
- Using a palette knife or rubber spatula spread the chocolate evenly all over the crust.
- Sprinkle with chopped or slivered almonds and gently press the almonds into the chocolate lightly with a fork.
- Keep aside for the chocolate to set. You can refrigerate it to quicken the process.
- When the chocolate is set, cut into desired shaped bars or you can break it into rough pieces.
- Enjoy crunchy healthy chocolate almond bars any time, store leftovers in the refrigerator in an airtight container.
Notes
You can double the recipe and bake in a 13X9 inch pan.
Use any kind of chocolate or nuts you like.
If you want even sized bars, do not allow the chocolate to set until very hard.
It is easier to make even pieces when the chocolate is almost set. Once it is hard, you may have to break them into rough pieces.
