Christmas is almost here and every household is filled with the aroma of delicious cakes, cookies, desserts and anything Christmassy!
Christmas trees have been put up, ornaments hung and gifts for family and friends being wrapped and placed under the glistening Christmas tree!
Although many of us pop into nearby bakeries or shops to pick up delectable bakes, there is nothing like homemade cookies and cakes, don't you feel?!
With many of us going vegan (dairy free and egg free) and for some of us who do not mind some butter or ghee and absolutely love cakes and cookies but are not comfortable with the addition of eggs; I have always tried to veganize any traditional cake or cookie so that everyone gets to enjoy the Christmas spirit with cakes and cookie bakes!
Here is a small collection of EGGLESS CAKES AND COOKIES that I have shared over the past 3 years! Some of them are vegan, some have butter and some are no bake for that novice baker or somebody who does not have an oven!
I have even tried to substitute healthy ingredients to enjoy these treats guilt-free!
Something for everyone.

MERRY CHRISTMAS AND A VERY HAPPY AND PROSPEROUS NEW YEAR TO ALL OF YOU!!
Before you start baking these decadent treats for this festive season, here are a few tips for a perfect Holiday Baking Success!
- Read through the whole recipe before you start baking. You do not want to run around for any ingredients or equipment while the dough is being mixed or you are just about to start baking!
- If you are baking for the first time, it is always best to follow the original recipe exactly!
- See if you have all the ingredients before baking. If you do not have, either postpone baking until you get the proper ingredients or look to see if you can substitute with another similar ingredient.
- "Mis en Place"! This is a French word that means putting everything in its right place. Before starting to mix the dough or starting to follow any recipe, keep everything (ingredients and equipment needed) to be used ready!
- Measure/weigh the ingredients properly. Use only the best quality ingredients. For liquids, once in the measuring glass, it should be checked at eye level. For dry ingredients, fluff up the flour, spoon into measuring cup and then level with a knife or spatula.
- Use the right sized pan as stated in the recipe. If you do not have one, use a different one but adjust baking time.
- Line the pan with parchment paper. If you do not have parchment paper, you can use aluminum foil, but you will have to grease it with butter and flour.
- If using just the pan, grease and flour well with softened butter or even ghee (clarified butter).
- Preheat oven to the right temperature as mentioned in the recipe BEFORE you start making the dough.
- If you need softened, room temperature butter, remove from fridge at least an hour before you start to make the dough. If using eggs, same tip goes.
Here are some basic ingredients I always have in my pantry for those instant cravings for making something homemade:
- Flour (Maida/all-purpose flour, whole wheat flour, rice flour, cornflour, almond flour etc.)
- Sugars (White granulated, icing/confectioner’s sugar, brown sugar, jaggery, honey, brown sugar, date syrup etc.)
- Leavening agents : These are needed to give rise to your bake be it cookies or cakes. The basic ones are baking soda, baking powder (keep checking the expiration date on the boxes), yeast, flaxseed etc.
- Salt. All cakes or cookies need a dash of this to balance the sweetness.
- Butter/oil/shortening: I prefer to use unsalted butter as I can control the amount of salt in my cookies or cakes. I use vegetable oil mainly ( a neutral, odorless oil).
- Dairy: Milk, Yogurt
- Cocoa powder
- Chocolate chips (white, dark and milk)
- Nuts (almonds, cashew, pistachios, peanuts)
- Raisins (black and/or golden)
- Eggs (if using in baking); I have used flax seeds in most of my bakes. Just use 1 tbsp of flax seed powder in 3 tbsp of water and rest 5 minutes. This is a substitution for 1 egg.
- Flavorings or extracts : Vanilla, Rose, Pineapple etc. Of course, use the best quality and authentic/natural....no artificial flavors at all! You can also stock on almond extract, peppermint extract etc. if baking a lot.
- Spices: Cinnamon powder (optional: nutmeg, ginger powder etc.)
Optional ingredients to have on hand:
Oats (rolled oats), peanut butter, jams, jellies and preserves, dry coconut powder, chia seeds etc.
Equipment needed:
- Parchment paper
- Aluminum foil
- Baking sheets and baking pans of different shapes and sizes including muffin/cupcake pans
- An electric beater
- Silicone spatula
- Different sized bowls for mixing dough.
- Measuring cups and measuring spoons.
