Creamy Yogurt parfait, a quick, easy and healthy dessert or breakfast parfait with strawberry compote and crunchy cereal, that can be ready in no time.
This parfait is so scrumptious, it is perfect as an instant sweet treat when guests drop by or when you need something healthy and delicious as a quick breakfast or snack too!
I have been having a writer’s block the past few days, so most of my recipes that I have uploaded on my blog have been ones that have been drafted before. In a way, I do get a break to do other pending projects or chores that I have in my house, although my hands were itching to create something new for my food blog.
This idea of a quick and easy parfait using yogurt had been on the back of my mind for a few months now. Recently, I bought a box of Kellogg’s cereal (my favorite Raisin Bran Crunch), and to my dismay, I found it a bit sweeter than I remembered! (By the way, have you tried my prize-winning dessert Carrot Cake Parfait)?
I normally used to love having a bowl of this with some fruits for breakfast or even as a snack in front of the TV, binge watching on my favorite serial on Netflix! As this box happened to be much sweeter than I would have liked, I decided to use it to make a yogurt parfait as the crunchy, but healthy element (I still love the flavor and crunch in every bite!!) and I was so excited about it!
With some fresh strawberries (or even frozen) and a canister of fresh thick yogurt in my fridge, putting this up was easy as can be!
If you have plain yogurt, just mix in some honey, maple syrup or any sweetener you like (or leave it plain as such), or even use flavored yogurt (this will have lots of sugar!), make a strawberry compote (or any fruit compote by cooking it down with some sugar and lemon juice or even use orange juice to macerate the fruit) and start layering them in a pretty dessert glass or any fancy glass that you have, along with spoonfuls of cereal ending up with a final topping of crunchy cereal and a garnish of fruits.
If you do not want the added sugar in the compote, just chop some fresh fruits and use them instead of making the compote. If you do not have this flavor of cereal, use any cereal you have at home or even some chopped healthy cookies or brittles like peanut brittle or cashew brittle etc. Just dig into your pantry; I am sure you will find something interesting, crunch and tasty to add to your parfait!
That is it! Now wasn’t that easy and quick? So, head on to the kitchen and rustle up this healthy parfait for you or even your kids and family to enjoy right away. It is so easy and simple to put up, you can let your kids make this and have fun in the kitchen; of course on your watch!
The fun part is you can make it as big or as small as you want, depending upon your appetite!
This is a great idea for brunch or parties where you just put out all the ingredients like yogurt (plain or flavored; a variety of them; you can even make custard too), cut fruits, some fruit compote (optional), breakfast cereals or even homemade granola, nuts, chocolate chips, jello, chocolate sauce etc. Let your imagination go wild and have a fun and healthy dessert or breakfast party!

Step-by-step method to make Creamy Yogurt Parfait:
To make the strawberry compote:
In a saucepan, add chopped strawberries and sugar; cook on medium heat stirring often until slightly softened.
Once the strawberries start to release water, gently macerate or press down with the ladle, crushing a few berries, stirring occasionally.
After a few minutes, when the berries have thickened a bit, add lemon juice and remove from heat. Cool completely. At this stage, it can be refrigerated until ready to layer the parfait.
Meanwhile; if using plain yogurt, stir in honey (or sugar or any sweetener if using to sweeten the yogurt) or leave it unsweetened. You can even drizzle honey over the layered yogurt instead of mixing it in now. You may have to whisk the yogurt to make it creamy and flowing.
To assemble the parfaits:
In large parfait individual glasses (or any dessert glass that you have), start layering the elements of the snack or dessert parfait.
Start with a layer of yogurt, about 2 tbsp or more depending upon the size of the glass. Spread it out at the bottom of the container. Drizzle some honey over it; as much as or as little as you want.
Then spoon some cooled strawberry compote over it and level with a spoon over the yogurt. For added flavor and texture, place some blueberries on top of the compote.
Next top with or sprinkle cereal (you can crush the cereal a little if the grains or flakes are too large); about 2 tbsp and level it evenly over the yogurt.
At this stage, you can sprinkle some nuts and then continue layering with cereal, yogurt (with more honey) and compote, ending with a final layer of cereal on top.
Place a dollop of yogurt on the top of the parfait.
Garnish with fresh strawberries and serve right away before the cereal gets soft!!
Enjoy it as a healthy and quick breakfast dish, serve it as a dessert or dig into it as a mid-day snack any time!
With the addition of kids’ cereal (of course, choose low-sugar varieties), your kids will enjoy it too and you have a healthy option for them. You can even let them make these the way they want!

Ingredients
- 2 cups thick yogurt (Greek or hung yogurt or any flavored yogurt)
- 2 to 3 tbsp honey (if using plain yogurt)
- 1 cup breakfast cereal (I have used Kellogg’s Raisin Bran Crunch; you can use any that you have or even granola)
- 2 cups strawberries, chopped
- 2 tsp sugar
- 1 tsp lemon/lime juice
- ¼ cup slivered almonds or any other chopped nuts (Optional)
- Few blueberries and strawberries for garnishing
- Optional add ins:
- Toasted flax seeds
- Chocolate chips
- Granola
- Crushed peanut brittle (or chikki as we call it in India)
- Crushed biscuits or cookies

Notes
You can use any favorite cereal of yours like granola etc.
Be adventurous and let your taste buds decide what you want in your parfait.
It is best served fresh as the cereal in the parfait can get soggy; if making ahead, sprinkle the cereal only on top.
Use any combination of fruits that you like; it could be mangoes, blueberries, raspberries etc.
For a different flavor, you can make compote with a mixture of fruits (strawberries, blueberries, raspberries) or just chop the fruits and layer in the parfait.
For a quicker version, you can use fruit preserves instead of compote; just add a squeeze of lemon juice to cut down the sweetness a bit.
Sweetening the yogurt is totally optional.
