DAIKON AND CARROT SALAD – a refreshing, cleansing salad with fresh winter vegetables like carrots and radish/daikon/mooli in a tangy, mildly sweet, chatpata honey and lime dressing!
Who said salads should be enjoyed only in summers? Nutritionists recommend having a bowl of fresh salad with every meal or even as a complete meal!
Although summers are when we crave for a crunchy, cool and refreshing salad, winter vegetables like carrots and daikons (or mooli/white long radish) come to our rescue in winters when these vegetables are peaked in their nutrition!
WHAT ARE DAIKONS?
These are long, white (or even red) radishes which is a root veggie in season in winters but available all year round. It is a powerhouse of nutrition; chock full of fiber, vitamins, minerals, has an anti hypertensive property and keeps you hydrated because of its high water content.
Although sometimes it has a slightly bitter edge to its taste, most of the time, they are crunchy and delicious; a winter favorite especially in the northern parts of India.
Once washed and peeled, they can either be added to salads (grated or chopped), or even made into stir fries, pickles or even stuffed in parathas (Indian flat breads) to make mooli ke parathe.
If you can get some with the fresh leaves still intact, then yayy!! DO NOT THROW THESE! Added to soups, curries or stir fries they give an added nutrition to your meal! You must check out these where I have used the leaves too -

DAIKON AND CARROT SALAD with Homemade Dressing:
It is always good to munch on fresh veggies whenever possible but encased in a lip smacking dressing, who can resist them?
Radishes/daikons are not everyone’s favorite, but carrots are. So to make my family eat their daikons, I decided to make a lip smacking homemade dressing of lime/lemon and honey.
Just shake up some lime/lemon juice, a dash of honey and oil for an instant homemade dressing. For the Indian in me, I added some chatpata (or lip smacking) chaat masala powder (a spice powder used in Indian street foods).
If you cannot find this spice powder, you can omit it or even add any other herb you like.
Just julienne radishes and carrot and drench them in this homemade dressing. A sprinkle of crushed peanuts, roasted sesame seeds, fresh cilantro and mint leaves is all you need to make this salad irresistible!
SERVING SUGGESTIONS:
It is best served chilled or at room temperature too. It goes great as a side with any Asian dish or even with a main course!

Ingredients
- 1 large or 2 medium Radish/daikon
- 1 large Carrot
- 1/4 cup Peanuts/groundnuts, coarsely crushed
- 2 tablespoons Raisins
- Few mint and Coriander leaves
- 2 teaspoon roasted white Sesame Seeds
- FOR THE DRESSING:
- Juice of one large Lemon/lime
- 3 tablespoons salad oil (any odorless oil or even Olive oil)
- 1/2 teaspoon chaat Masala powder
- 1 teaspoon Honey
- Black pepper powder
- Salt if needed (as Chaat Masala powder has salt)
Instructions
- Wash, peel and cut daikon and carrots into long juliennes. You can even chop them if you prefer.
- In a small tight-lidded bottle, add all the dressing ingredients, close with the lid and shake well for a few seconds.
- Taste and adjust seasonings according to personal preference.
- Crush peanuts in a mortar pestle to a coarse mixture.
- Gather all the ingredients for the salad.
- Transfer all of the dry ingredients into a large bowl.
- Add the salad dressing and mix gently with two ladles or better yet with clean hands to mix the dressing thoroughly.
- Garnish with more peanuts and serve chilled.

Notes
You can use any type of vegetable you prefer in the salad.
Instead of raisins, you can use chopped dates, dried cranberries etc.
Instead of peanuts, you can even use walnuts or chopped almonds too
Serve the salad slightly chilled.
