Easy No-Bake Lime Cracker Pudding

Easy, no-bake lime cracker pudding; a creamy, scrumptious and absolutely refreshing dessert! With just 4 ingredients, it is the perfect make-ahead sweet ending to any party or special occasion!

I love no-bake desserts that come together in no time with minimal effort and ingredients. When I came across this one online, I was so excited as not only did it sound and look so luscious and delectable, it was so easy to make with ingredients that I already had in my pantry!

You need just basically 4 ingredients; condensed milk, heavy cream, lime and salty crackers! I had just bought a box of Ritz crackers to enjoy with my evening adrak chai/ginger tea. This dessert sounded like the perfect dish to use it in!

The best part is, it is so easy to make; just mix the cream, condensed milk and lime juice; layer alternatively with the savory crackers and chill!  That is it!!

I was a bit wary to try a salty cracker in a dessert. But as I was making it along with my daughters-in-law, I noticed they were enjoying themselves dipping the crispy salty crackers in the freshly beaten pudding mixture and munching away! From the look on their faces, I sort of knew that maybe I had a winner in this!

The toughest part was waiting for it to chill thoroughly to allow the crackers to soak up all that fluffy sweet goodness and sort of get a soft cakey bite!  The more it chills, the better the flavors and textures!

When it was time to taste it, we were all ecstatic. This dessert was delightfully delicious! It was creamy, refreshing and had a lovely balance of sweet and salty.

The vibrant citrusy tang of lime juice was like icing on the cake or in this case, pudding! The tanginess from the lime juice balances perfectly with sweetness of the condensed milk, creaminess of the whipped cream and saltiness of the crackers which had turned to a soft, cake-like bite!

I could not believe that the salty crackers I was so hesitant to use actually toned down the sweetness of this dessert! In my book, this is a complete winner and something I would love to make all summer long!

Have leftover cream mixture? Then serve them as dessert dip with more crackers, fruits or even some salty potato chips!! Doesn't that sound delicious?

Rustle up this no-bake, creamy, 4-ingredient, easy, eggless pudding right away and treat your family to a super delicious dessert this weekend!

Step-by-step instructions to make No-bake Lime Cracker Pudding:

Combine condensed milk, cream and lime juice in a chilled bowl and beat with a hand mixer until slightly thickened. This could take about 3 to 4 minutes.

Alternatively, beat chilled heavy cream with your beater until thick and fluffy.

Gently fold in lime juice, lime zest and condensed milk.

Mix well.

Take a wide dessert dish and start layering the pudding and crackers .

Spoon a little of the pudding mixture on the bottom of the dish; gently place salt crackers over the pudding in a single layer to cover fully.

Layer some more pudding over the crackers and alternate crackers and filling until the pan is full and the top layer is pudding.

Sprinkle some more lime/lemon zest over it.

Cover well and refrigerate or chill for at least 6 hours or best overnight!

The longer you let it set, the softer the crackers become. They soak up the sweet pudding to get a lovely, soft, cake like texture. This actually tones down the sweetness of the pudding to a decadent sweet, salty, tangy divine dessert!

Serve chilled!

Serving Size: 8 to 10

Easy No-Bake Lime Cracker Pudding

Sweet, creamy, tangy, slightly salty and absolutely decadent no-bake pudding with just 4 ingredients! This is the perfect make-ahead easy dessert to share with friends and family!

Ingredients

  • 2 cans condensed milk
  • 2 cups heavy whipping cream
  • Salt Crackers (Ritz or Monaco/Krackjack/Parle salt biscuits)
  • Juice of 4 to 6 limes (about ½ cup), if you cannot get lime, use lemons instead
  • Zest of 2 limes/lemons

Notes

Make sure the cream and condensed milk are well chilled.

If you cannot find any limes, you can substitute with lemons. Adjust the amount of lime juice or even lemon juice to suit your taste.

Try to use only crispy, buttery salt crackers like Ritz, Monaco, Sunfeast salt crackers etc. Make sure they do not have any spices like chilli, cumin, onions or is too salty!

The more the crackers soak in the pudding, the better the flavor and texture becomes!

You can easily halve this recipe to make in a smaller bowl/dish.

This is a perfect dessert to serve in individual dessert glasses too.

    I make lemon ice cream in almost the same way - using heavy cream, lemon juice, lemon zest and condensed milk - and it tastes absolutely fantastic. I can only imagine how beautiful this would taste, with the addition of salted crackers! I'm so going to try this out. 🙂
