Easy Peanut Butter Brownie Bites

These Easy Peanut Butter Brownie Bites  are made in a jiffy,  healthy, delicious  (and no bake) with good for you ingredients like almond flour, honey (or maple syrup if vegan), cocoa and natural peanut butter with some chocolate chips to add to the brownie bite experience!

No cranking up a hot oven and no firing up the stove (if using the microwave to melt the chocolate chips) for making these scrumptious bites of chocolate and peanut butter heaven!

You will need just 5 minutes of your time to make these delicious, soft, fudgy and guilt free snacks of chocolate and peanut butter brownie heavenly bites.

Anything is better with chocolate and peanut butter right? A perfect snack and pick-me-up to indulge in gleefully!

I just love the ease with which these scrumptious and decadent bites of brownie bites comes together.

All you need is to melt chocolate chips (dark, semi sweet or milk; your preference) with some creamy peanut butter (natural, sugar free and use chunky if you like bites of crunchy peanuts in your sweet delights) until just warm, mix in honey (or maple syrup or jaggery syrup) and stir in fine almond flour (not almond meal), some cocoa powder and a dash of salt to form a smooth dough.

Rest a bit and form into smooth, delicious balls of peanut butter brownie deliciousness!

(If the dough is too soft, then chuck it in the fridge to set up a bit and then make smooth balls)

Time to pop them in your mouth to transport yourself to peanut butter-chocolate heaven and do the happy dance!

This is going to my "must make often" recipe repertoire to rustle up and enjoy again and again! I am sure once you make these, it will be your favorite too.

MAIN INGREDIENTS NEEDED TO MAKE PEANUT BUTTER BROWNIE BITES:

Peanut butter- creamy, natural and sugar free peanut butter is best. But if you love some crunch and texture in your brown bites or snacks, feel free to use crunchy peanut butter.

If using peanut butter with sugar in them, adjust the amount of honey/maple syrup accordingly. You can substitute with almond butter. You can use almond butter too if that is your choice or you have only that.

Chocolate chips – I have used dark chocolate chips but you can use semi sweet or even milk chocolate also. If making it vegan, use vegan chocolate chips.

Honey – just make sure you add honey to warm mixtures; never recommended to use honey in hot foods. If vegan, use maple syrup instead.

Almond flour – you have to use fine almond flour and not almond meal. I have tried with coarse almond flour (unblanched and ground with skin) and this comes out good too!

Cocoa powder – unsweetened cocoa powder

Salt – just a pinch

HOW TO MAKE DELICIOUS 5-MINUTE PEANUT BUTTER BROWNIE BITES:

In a microwave safe bowl (or in a double boiler over a stove), mix peanut butter and chocolate chips and melt using 30-second bursts until the chocolate chips start to melt.

Remove and stir well to make a smooth mixture. Do not make it hot; you need a warm mixture with the chocolate chips just melted in.

When the chocolate chips have started to melt, remove from heat and stir with spoon until they are totally melted. At this point, the mixture should be warm. Return to heat if you feel the chocolate chips need a dash of heat to further help in melting.

Add the honey (or maple syrup) and stir again.

Stir in almond flour, cocoa powder and salt.

Using a silicone spatula or spoon or even using clean hands, make a smooth and homogenous mixture. Knead until smooth and satiny.

Rest a while. I popped it into the fridge until I could form smooth, firm balls.

Remove and form into bite sized balls.

Enjoy and if any, store leftovers at room temperature for a couple of days. Our family loves them cold, so I chilled them in the fridge.

VALENTINE DAY BROWNIE BITES:

If you are looking to making these for Valentine's Day, then all you have to do is make the basic peanut butter brownie bite dough, layer and set to freeze in a parchment paper lined loaf pan for 30 minutes....

Place on parchment paper lined baking sheet in the freezer to set again and harden a bit.

(If the heart shaped bites are soft then it would be difficult to dip them in the melted chocolate)

Dip in melted dark chocolate and then set again on parchment paper lined sheet.

If you are looking to make it colorful like during Valentine's Day, then top with some colored sprinkles before the chocolate sets.

My tip would be, to dip and coat a couple of them, sprinkle the colored sprinkles (before the chocolate sets) and then continue dipping the other brownie bites in melted chocolate.

Continue to dip as many as you want and set on parchment paper lined sheet.

Gently remove from the pan when the chocolate has set and enjoy; best when chilled thoroughly!

You can choose to avoid the colored sprinkles and top with just crushed almonds, coarse salt etc. or even leave them plain to make it a bit healthier.

Any which way, you and your family are going to love making these easy peasy, no bake Peanut butter Brownie Bites, either plain or coated in dark chocolate.

Ingredients

  • ¼ cup smooth natural peanut butter
  • ¼ cup honey or maple syrup
  • ¼ cup chocolate chips preferably dark but you can use semi sweet or milk chocolate
  • 3 tbsp unsweetened cocoa powder
  • Pinch of salt
  • ¼ cup plus 3 tbsp almond flour or as needed

Instructions

  1. In a microwave safe bowl, heat peanut butter and chocolate chips in bursts of 30 seconds until chocolate chips start to melt. You can use a double boiler (on stove top) to do this too.

  2. Remove and mix using a spoon or spatula until the mixture is smooth and all the chocolate chips have melted. Continue to heat for a few seconds if still needed. Ultimately you need a warm mixture; not hot.
  3. When warm and not hot, stir in honey.
  4. Add almond flour and cocoa powder with salt and mix again well using a silicone spatula to form a homogenous and smooth mixture/dough.
  5. Cover and place in refrigerator to chill slightly. This step is crucial to help in form balls.
  6. When almost firm,  form into smooth, shiny bliss brownie bite balls!
  7. Enjoy!

Recipe Notes

  • Adjust the amount of flour and honey according to consistency and taste.
  • Stir in honey only to warm mixture and not hot!
  • If vegan, use maple syrup.
  • It is recommended to use only "fine" almond flour and not almond meal.
  • Can substitute peanut butter (creamy or crunchy) with almond butter.

    You could just make it with 3 ingredients, chocolate chips, peanut butter and almond flour. Tastes better imo.
