Egg-Free Raisins and Walnuts Quick Bread is loaded with heart-healthy walnuts and sweet, juicy raisins! These are just perfect as a snack or dessert! Did I tell you it is eggless and with no butter?
The present theme for our facebook group “Healthy Wellthy Cuisines” is "#Bakingwithfruityaffair"! Being Christmas time and lots of parties, get togethers and holiday mood all around, everyone wants to make something special for their family and friends to indulge in the festive mood!
I had 2 large boxes of California black raisins (we love to munch on them whenever we need a quick snack!) waiting to be used up fast! I love to stir in some ghee roasted raisins in my Indian desserts like Apple Kesari Bhaath, Chana Dal Khichdi etc. and even in my bakes like in Muesli Banana Muffins and Oatmeal Raisin Cookies! With this theme coming up, what better than raisins to fruit up my bake!
Walnuts always are a good combination with raisins (and they are super healthy too!), so that was it; I had to make something with these two rich and healthy ingredients! I love cakes and quick breads and I had not made any bake in my new loaf pan!
So, this time, I decided to treat my family to this super quick and easy eggless raisins and walnuts quick bread. Quick breads generally need no large preparation nor are they time consuming; just some leavening agent like baking soda, flour, oil or butter and add-ins like dried fruits, nuts, chocolate, fresh fruits etc. Just mix these (not much muscle needed to mix these up either!). For an egg-free option, I have used flax meal; you can use one egg instead.
Mix the dry and wet ingredients separately, stir in or fold the two gently (again no over mixing!), spoon into a loaf pan and bake for 45 minutes to an hour! The best part is you can play around with flavors, textures, colors and you can enjoy a variety of cake-like breads in no time!
My quick bread with raisins and walnuts came out so moist and delicious, they were gone in no time! Both my mom and husband loved it and we indulged in it at tea time as well as a dessert, topped with vanilla ice cream! You must try this combination; a favorite in my family! With lots of family around, the rest was gone in no time!
These have come out so good, I have repeated requests to make them again!
So, do try this amazingly moist, healthy and super fast eggless raisins and walnuts quick bread and make your Christmas or any moment special!
How to make Egg-Free Raisins and Walnuts Quick Bread:
Grease and flour a 9x5x4 inch loaf pan or line with parchment paper. I have lined the bottom with parchment paper.
Preheat oven to 350 F or 180 C.
In a small bowl, mix 1 cup milk with 1 tbsp of vinegar (for the sour milk or use buttermilk instead) and keep aside.
Stir 1 tbsp of flax meal (ground flax seeds) with 3 tbsp of water and keep aside; if you prefer eggs, you can 1 egg instead of the flaxmeal. You can read more about using flax seeds instead of eggs here.
In another small bowl, stir flour, baking soda, salt, raisins and walnuts well with a spoon, spatula or wire whisk until well combined.
In a medium-sized bowl, whisk the flax meal mixture with sugar; to this add sour milk, vanilla, oil and the lemon zest and give it a good mix.
Stir this mixture into the dry ingredients and fold with a spatula until just combined; do not over mix or the quick bread will turn out tough.
Pour into the prepared pan and level the top.
Bake in preheated oven for 45 to 60 minutes until a toothpick inserted in center comes out clean. Mine baked perfect at around 55 minutes.
Remove the pan from the oven and let cool on a cooling wire rack for about 15 minutes.
Gently loosen the sides of the cake with a knife and remove the quick bread from pan.
Cool completely on wire rack.
Slice and enjoy scrumptious eggless raisins and walnut quick bread with tea or coffee!
Store leftovers at room temperature for a day or two and then either refrigerate or freeze to enjoy later!

Notes
If you prefer egg, you can use that instead of flax meal.
In place of raisins, you can use any other dried fruit like dried cranberries, maraschino cherries or even candies fruit peel or if you love chocolate, how about some chocolate chips!
You can use buttermilk instead of sour milk.

Yes, of course 🙂 You can replace, just that using whole wheat flour will make the cake a bit dense. I prefer wwf actually!
