Celebrations begin with Blueberry Lime Yogurt Cake; a soft, fluffy and moist egg-less yogurt cake, made with whole wheat and filled with fresh blueberries! This is going to be your go-to summer dessert!
I am amazed that 2 years have flown by since I first posted on my food blog! The journey has been exciting, sometimes scary, exhilarating, a lot of persistent hard work and best of all, a lovely platform to make a lot of new friends!
Along the way, I have learnt a bit of photography, forayed into a bit of computer geek language, honed my cooking and baking knowledge/skills and treated my family and friends to some amazing and easy healthy and indulgent dishes, to their glee!!
Just a year back, I was celebrating one year of food blogging with a lovely super easy Mango Sorbet! Another year has whizzed past and here I am, sharing another milestone with all of you!
Nothing like a large round beautiful cake to celebrate this occasion! So, with fresh and antioxidant-rich blueberries in my fridge, a fluffy eggless and healthy blueberry cake it was. I decided to stud the top with more berries to make it look gorgeous and sprinkle some fresh red raspberries for a lovely contrast in color! Don’t they look pretty?
To the cake:
To celebrate and in appreciation of all of you: family and friends (new and old), I have made a lovely, luscious fresh blueberry eggless cake with a dash of fresh lime juice! Now, why is this cake special?
It is:
- My blog anniversary
- Delicious
- Has a nice lemon-cake taste
- Eggless
- Has no butter
- Needs no beater or mixer
- Delicious; hey I have already said that
- Healthy with whole wheat
- Has very little sugar
- ….I can go on!!!!
Now, enough of this and let us go on to this fluffy deliciousness!!
How to make this lovely healthy cake:
Who doesn’t love a soft and moist cake, that too with fresh fruit! We had just bought a few cartons of lovely fresh blueberries, but they were not sweet enough to enjoy as a fruit! Recently, I had made some fluffy fresh blueberry muffins which we loved and devoured in no time and now we wanted some more!
So, I decided to make a round quick cake studded with these blue beauties! The basic cake is simple;
- Just some flour (more of whole wheat and a wee bit of all-purpose!)
- Fresh lime juice for a lovely tongue-tingling tang (a tongue twister for you!); I love the flavor of lime but you can use lemon juice too!
- More lime flavor(duh!!) ; freshly grated lime zest, for some more limey taste; I love it!
- Wanted to make it eggless for some of my friends and family who prefer bakes without eggs; so a lovely perfect substitution; creamy plain yogurt!
- Love the softness and lightness oil gives to a cake as compared to butter, especially if it is chilled; so some simple cooking odorless oil like vegetable oil.
- Love my cakes a tad bit less sweet; so I added just half a cup of sugar! Well, we have healthy fruits to sweeten the deal! Love your cakes sweeter? Stir in ¼ cup more if you like.
- More fruits on top; who doesn’t love a beautiful looking cake to ogle at first! Feel free to use any fruit you love or even dried fruits like raisins, apricots, cranberries or even some decadent chocolate chunks!
Just mix the dry ingredients; flours, baking powder, baking soda and salt with the lime zest.
Whip up the oil and sugar and stir in yogurt with lime juice.
Mix the wet and dry ingredients.
Gently fold in the berries (or any other substitute add-in you like). Do not mix in too much or the berries will break and bleed into the batter!
Pour into prepared pan and stud with more berries on top! Then, bake in hot oven until fully done!
Now, who would not want to dig into a slice of this?
Cool and serve this luscious fresh fruit lime cake at teatime, as an anytime snack, at parties or get-togethers etc. and enjoy with family and friends!
Store leftovers in the fridge and enjoy chilled slices all-week long! I love to enjoy cake with a large scoop of vanilla ice cream!

Now, let us learn how to make scrumptious and healthy blueberry lime yogurt cake at home with this easy and simple recipe!
A soft, fluffy and tender eggless Blueberry Lime Yogurt Cake, made with whole wheat and filled with fresh blueberries! This will be your go-to summer dessert!
Ingredients
- 1 cup whole wheat flour
- ½ cup all-purpose flour/maida
- 1 teaspoon baking powder
- ½ tsp baking soda
- 1/4 teaspoon salt
- Zest of 1 lime/lemon
- 1/2 cup oil
- 1/2 cup granulated sugar
- ½ cup yogurt
- ½ cup milk
- Juice of 1 lime/lemon
- 1 ½ cups blueberries, lightly coated a little flour (about 1 tsp)
- Few Raspberries, optional
Instructions
- Preheat oven to 350 F or 180 C
- Grease and flour a 9-inch pan or line with parchment paper. (A small tip: lightly grease the bottom of the pan before lining with parchment to keep it in place!)
- In a medium sized bowl, mix the flours (whole wheat and all-purpose), baking powder, baking soda, salt and lime zest with a whisk to combine well.
- In another large mixing bowl, cream the oil and sugar well. Stir in the yogurt and lime juice until combined.
- Tip in the flour mixture along with milk and mix well. Do not over mix to avoid a dense cake. If the batter is too thick, stir in a teaspoon or two of milk.
- Gently fold in the blueberries, leaving a few to sprinkle on top.
- Pour batter into prepared pan and level the top.
- Sprinkle the remaining blueberries and raspberries, if using, on top.
- Bake in preheated oven for 30 to 40 minutes (depending upon your oven) until a toothpick inserted in center comes out clean. The top will be light golden.
- Remove from oven and cool on wire rack.
- Serve soft, fluffy, moist and scrumptious blueberry lime cake at room temperature or even chilled (yumm!!) with your evening snack along with tea/coffee, as an anytime hunger treat or even as a lovely dessert with a scoop of vanilla ice cream at your next party!

Notes
If you cannot find fresh blueberries, use frozen, but do not thaw.
Once you mix in the berries, do not mix too much, they will break up and bleed into the batter and make blue streaks!
Substitute any other fruit instead of blueberries like chopped apples, peaches, plums etc.
Love chocolate? Then stir in lots of chocolate chips/chocolate chunks instead or even some of your favorite dry fruits like dried cranberries, raisins, dried apricots etc. Let your taste buds decide.
