Fudgy Double Chocolate Brownie Cookies-Eggless

These dark Eggless Fudgy Double Chocolate Brownie Cookies with whole wheat flour; oozing with ooey gooey chocolate in every soft chocolaty bite, will be a hit with your family and friends!

Plonk anything with chocolate in front of me and my knees go weak, my mouth waters and eyes start to glaze. I am a pucca chocolate fanatic, “devotee”, fan whatever you may call me! Case in point, my other chocolate creations: Easy Chocolate Bark, Chocolate Walnut Fudge or Vegan Mocha Banana Chocolate Cake to name a few!

These black beauties are soft, rich, brownie like and filled with chocolate chips in every bite and now my new favorite cookie! For additional crunch and decadence (and more chocolate nirvana!),  I have topped some of them with more chocolate; a single chocolate candy (M&M). Mix in some in the dough too if you like! Don’t they look pretty and colorful?

The best part is, these are healthier as they are eggless, made with whole wheat flour and are so easy to make.  Lacto vegetarians, make note!

All you need is some basic pantry ingredients like whole wheat flour, cocoa powder (no melting of chocolate here which some find a bit stressful), butter, brown sugar and fiber rich flax seed which is a healthy swap for eggs in most bakes.

I have used dark cocoa powder, hence the dark color of the cookies. Regular cocoa powder will produce lighter brown cookies.

As mentioned in my eggless peanut butter cookie recipe, flax seeds are a perfect healthy substitute for eggs without any compromise in bake rise or taste.  Just blitz some flax seeds into a fine powder and soak in required amount in water to make an easy one-for-one swap when you need eggs.

Then beat butter and sugars until light and fluffy with flax meal and vanilla. Stir in the dry ingredients until well incorporated. Fold in your favorite mix ins like dark, light, milk, white chocolate chips, nuts, candies etc.

A quick chill in the refrigerator and off to bake for 10 to 12 minutes. If you want soft, fudgy brownie-like cookies, DO NOT OVER BAKE ! You are looking for a pillowy kind of soft here, like in a brownie.

These cookies are absolutely irresistible and decadent, especially on the day that they are baked. They do lose some of the "pillowiness", if there is a word like that, the following days but still retain all the flavors, decadence and chocolate divinity! So, no worries there.

You can bake as many as you want and freeze or chill the rest of the dough to bake and enjoy fresh "pillowy', "brownie-like" cookies any time!

Fudgy Double Chocolate Brownie Cookies-Eggless

Eggless Fudgy Double Chocolate Brownie Cookies with whole wheat; the most ooeist, gooiest chocolate cookies you can make; probably the softest cookies you’ll ever eat!!!

Ingredients

  • 10 tbsp unsalted butter, softened to room temperature
  • ¾ cup dark brown sugar
  • ¼ cup granulated sugar
  • 1 tbsp flax meal powder
  • 2 tsp vanilla essence/extract
  • 1 cup whole wheat flour
  • 2/3 cup cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 ¼ cups chocolate chips or a mix of chocolate chips and M&Ms/Cadbury Gems
  • Tools needed:
  • Large baking sheet
  • Parchment paper/silicone mat/aluminum foil
  • Silicone spatula
  • Whisk
  • 2 large bowls
  • Measuring cups (1 cup=250 ml)
  • Measuring spoons

Instructions

    Make the flax seed “egg”:
  1. Mix 1 tbsp flax meal powder in 3 tbsp water and keep aside for 5 minutes to thicken; this is “flax egg”.
  2. Dry mixture:
  3. In a medium sized bowl, mix or stir the whole wheat flour, cocoa powder, baking soda and salt with a whisk or spoon.
  4. Wet ingredients:
  5. In another large mixing bowl, beat softened butter and the sugars (brown and white) with a hand mixer until light and fluffy.
  6. Stir in the flax meal slurry and vanilla extract and beat again until well combined.
  7. Making the double chocolate cookie dough:
  8. Toss in the dry mixture into the wet beaten ingredients and fold gently with a spatula. Then beat again until incorporated; do not over mix.
  9. Fold in 1 cup of chocolate chips; keep rest for topping the cookie dough ball just before baking.
  10. Mix well, cover the bowl and keep in fridge for 2 hours or up to 48 hours.
  11. Just before baking, remove from fridge.
  12. Baking the cookies:
  13. Grease a baking pan or line with parchment paper or silicone mat. You can even line with aluminum foil and grease lightly.
  14. Preheat oven to 350 F or 180 C.
  15. Make small 1-inch balls of the dough and place 2 inches apart on baking sheet to allow the cookie to spread; flatten them slightly.
  16. At this stage, you can stud the cookie dough balls with more chocolate chips or press one M&M into each cookie dough.
  17. Bake for 10 to 12 until the tops are just set or you start to see cracks. Do not over bake or the cookies will turn hard.
  18. Remove from oven and let cool on pan for 2 minutes.
  19. Cool cookies completely on wire cooling racks.
  20. Enjoy fudgy, soft, cake like double delight chocolate cookies warm, just out of the oven or at room temperature.
  21. Store leftovers in airtight containers.
  22. Happy Baking!

Notes

You can freeze part of the dough so you can enjoy fresh baked cookies any time! Thaw in refrigerator for 24 hours.

Stir in any of your favorite mix-ins like nuts, dried fruits, white chocolate chips etc. for more flavor and texture.

I have used Hershey's Special Dark Cocoa powder. If you cannot find it, use the any regular cocoa powder you can find.

    Rich cookie, looks more delicious..I love the addition of flax meal powder.. and have you powdered the flax seeds or is there anything available in the market for flax meal powder.

      Thanks so much dear 🙂 I have blended flax seeds in my coffee grinder and I store them in the fridge. I normally powder only a little at a time and refrigerate it. They turn rancid very fast, so it is better to grind them fresh. Flax seed powder is available, but it is better if you make them fresh yourself at home.

    Vanitha, I was hooked with the words - double Chocolate and Brownies and also saw my fav M & M's on top which sealed the deal for me. Fabulous and sinfully delicious. I agree about the no over baking aspect which will make the biting into the goey soft centre brownie like texture a wonderful experience. PS - I adore M & M's and during my US trip back in 2012, I ate them like they were peanuts from a paper cone. ha ha .. and couldnt sleep due to the sugar rush i experienced later.
