GUR PAPDI/GOL PAPI/SUKHDI (Whole Wheat Indian Fudge)

GUR PAPDI/GOL PAPI/SUKHDI is a super easy 3-ingredient Indian fudge made with just whole wheat flour, jaggery (unrefined cane sugar) and ghee/clarified butter. Enjoy it as a healthy snack or dessert any time!

Winters are here and everyone is looking for ways to keep warm. With ghee and jaggery, it is the perfect fudge/burfi to not only satisfy your cravings but with whole wheat flour in them, healthy too!

Jaggery/gur is not only good for you (full of nutrients and health benefits) but supposedly produces heat in the body when consumed, so it is the ideal food to ingest during cold wintry days. I remember during my times living in Delhi, during the cold and long winters, every lunch was followed by munching on some fresh peanuts and chunks of fresh jaggery.

It was so strange that it was like the body was craving for it during the cold, cold days. Once we saw days warming up with the advent of spring, this craving for jaggery subsided too! So, I guess, we have to listen to our body and eat accordingly!

Same goes with ghee. According to Ayurveda, consumption of ghee during winters, produces heat in the body, again helps to keep ourselves warm from within.

I first came across this oh-so divine burfi on my friend, another food blogger, Jagruti’s blog Jagruti's Cooking Odyssey. Her clicks are so gorgeous, I am always left gawking at the pictures and trying to learn from them.

When she shared her recipe for Sukhdi (as it is called in Gujarat, a western Indian state), also called “Gur/Gol Papdi” in Maharashtra (another western Indian state), my interest was piqued as she had mentioned it has only 3 ingredients!

Now, I am a foodie who loves to conjure up dishes in the kitchen with minimal effort and ingredients! With just ghee, whole wheat flour (called “atta” in India) and jaggery (called "gur:), all of which I always have in my pantry, as do all Indian kitchens, I had to try it!

All it took me was just 15 minutes to make this super fudgy burfi. Just melt ghee and roast the flour in it until light brown and aromatic. Stir in grated or powdered jaggery  and mix to combine.

Set it in a greased pan and cut into desired shapes; that is it! Now how easy is that?

I have sprinkled some slivered almonds on top along with some roasted sesame seeds (again, a winter food). This is optional.

The final fudge was so divine with a lovely, mild sweetness and melt-in-your mouth kind of texture! With healthy ingredients in them, you can eat them guilt free and wade through these chilly days, warming yourselves from within!

This burfi is surely a keeper in my must-make-these-often recipe list! Please do make them ASAP (as soon as possible) and enjoy with family and friends.

STEP-WISE METHOD TO MAKE GUR PAPDI/SUKHDI:

Grease a tray with melted ghee/oil and keep aside.

In a large deep saucepan/kadai, heat ghee until just melted.

Stir in atta/whole wheat flour and cook/roast/fry on medium low heat, stirring continuously.

Keep mixing and stirring until the flour starts to turn slightly dark and you get a nice aroma.

Initially, when you add the flour and mix, the mixture will be like a thick liquid. As you continue to fry it, you will notice that it starts to thicken and then after it has roasted/fried well, it will loosen up again and become liquidy. This is the stage to remove from heat. It took me about 14 minutes.

At this stage, remove from heat and keep on a trivet.  Keep stirring the mixture as the pan is still hot and the flour may burn at the bottom.

Once the mixture is slightly cool, add the cardamom powder, roasted sesame seeds and powdered/grated jaggery and mix well with a spatula/spoon to combine well.

As soon as you see the jaggery has completely melted and has combined, immediately pour the mixture into the greased pan.

Smoothen the top with a flat silicone spatula, greased metal spatula/ flat-bottomed bowl.

Immediately, sprinkle more sesame seeds and slivered almonds and press gently to embed them into the soft burfi.

While the burfi is still warm, make cuts into desired shapes. Let cool completely.

Serve fudgy, healthy and super delicious Gur Papdi/Gol Papdi/Sukhdi to you family and friends this winter! I have been munching on them whenever I get a sweet snack attack; they are so delicious!

Ingredients

  • 1 cup whole wheat flour/atta
  • ½ cup powdered/grated jaggery (unrefined cane sugar)
  • ½ cup ghee/clarified butter
  • ¼ teaspoon powdered green cardamoms/elaichi
  • 2 tablespoons of white sesame seeds, llightly roasted
  • 2 tablespoons slivered almonds

Instructions

Notes

Addition of cardamom powder and sesame seeds is optional.

Instead of almonds, you can use any other nut that you prefer.

Try not to burn the flour while roasting.

Cut into desired shapes while still warm as it may be difficult once they set.

    Sukhdi is my favourite sweet. We enjoy almost whole year but enjoying it in Winter has a unique taste.. Super delicious. We add edible gum , dry ginger powder like spices... love it

    I adore Gur Papdi or Sukhdi. Takes me back to the trips I used to make to Mahudi near Ahmedabad, and the gorgeous sukhdi they used to make as Prasad there! Your version looks equally delicious.
