Oatmeal Date Cookies Recipe (with and without eggs)

Oatmeal date cookies are the perfect way to include healthy dates and oats in your family’s diet.

These easy-to-make cookies are heavenly bites of fiber rich oats and juicy, sweet dates!! They are crunchy on the outside but chewy on the inside!!

Recipes for both with egg and without eggs vegan cookies are shared below.

Munch on these with a glass of cold milk, chai or coffee for a tasty, scrumptious treat!!

I know, Christmas is long gone, but who does not like a cookie to munch on when there is a snack attack!!

I am so happy to share this easy recipe which I have been using to make yummy healthy oatmeal date cookies full of healthy oats and dates for my kids ever since I can remember!

They have both moved out and are doing well for themselves in this wonderful world (making us proud every day); so frequency of making these has drastically reduced.

During a visit of some family friends last month, I decided to make these again and pack a bagful of them as a gift when they left (I did get a call from them later that they were so yummy!).

I dug out this recipe from my huge collection of cookbooks (it has been so long since I made them, I had to read through about 4 to 5 written cookbooks of mine to find it hidden in my tattered but well-used cooking journal!) and made a huge batch; some for them to take away and some for us at home (all of us have a fairly big sweet tooth)!!

You may very well know by now, my fondness for dates in my diet (Date and Cornflake energy bites, Eggless Date and Cashew nut cake, Chocolate covered stuffed Dates etc).

These cookies are another way to chow down some more dates (powerhouse of nutrition)!!!

With oatmeal for added crunch (and of course, they are good for you, with their cholesterol lowering properties and all that healthy mumbo-jumbo!!)  and whole wheat flour (what is there not to love in these cookies), I am sure you will not mind if your family gobble them up when you make them!

It is so easy to make: just mix the liquids with the dry ingredients, stir in oats and dates, make small balls, roll them in more sugar and bake. That is it!!

If you are wary of the extra sugar used for coating, you can omit it (but I would not, as it gives it additional crunch in every bite!).

With no butter, only oil, some whole wheat flour and healthy oats, it cannot get any healthier!

You can dress them up with added chocolate chips (for the chocoholics) or even some chopped nuts. If you don’t have dates, use raisins or dried cranberries! Any way you make them, I am sure you will love them.

VEGAN (no eggs, no dairy) OATMEAL AND DATE COOKIES (Updated March 2023):

With my blog and my kitchen veering mostly towards vegan and eggless bakes, I had to make these delectables eggless too!

So, I substituted the one egg with some flax seeds powder (1 tablespoon of powder mixed in 3 tablespoons water).

The oats that we get in the US are a bit thick and larger than the ones we get in India. So I powdered some of the whole, rolled oats for an easier bite. Mind you, I did still stir in some as is (1/2 cup out of the whole 1 1/2 cups of oats needed).

Also, I love raw sugar or sometimes called "turbinado sugar" here for it's caramely flavor instead of plain white sugar. You can still use plain sugar too.

For added aroma and flavor (not to mention the added nutrients), I have also stirred in some cinnamon powder too. This is optional but I truly love the flavor cinnamon adds to desserts and bakes.

Rest of the recipe is the same.

Make dough, roll, flatten and bake!

Healthy Oatmeal Date Cookies Recipe

Prep Time: 15 minutes

Cook Time: 15 minutes

Yield: 24 small or 18 large

Healthy Oatmeal Date Cookies Recipe

Crunchy on the outside and chewy on the inside oats cookies studded with healthy dates!

Ingredients

  • ½ cup vegetable oil
  • ½ tablespoon vanilla extract
  • 1 egg (or 1 tablespoon flax meal in 3 tablespoons water)
  • ¾ cup granulated sugar plus some for coating
  • ½ cup whole wheat flour
  • ½ cup all-purpose flour/maida
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups oats
  • ½ cup chopped dates

Instructions

  1. Preheat oven to 350 degrees Fahrenheit or 180 degrees Centigrade
  2. In a large bowl, mix 1/2 cup oil, 1/2 tablespoon vanilla, 3/4 cup sugar and 1 egg (or flax meal mixture in water) with a beater till well mixed.
  3. Stir in the flours (1/2 cup each whole wheat flour and plain flour), 3/4 teaspoon soda and 1/4 teaspoon salt.
  4. Gently, mix in 1 1/2 cups oats (either powdered or whole) and 1/2 cup chopped dates with a spoon or better yet with clean hands (nature’s best tool!!) to form a smooth dough.
  5. Place some granulated sugar in a bowl.
  6. Make small balls of the dough and roll in the sugar.
  7. Place the rolled dough about 2 inches apart on an ungreased or parchment paper lined pan.
  8. Press each ball slightly flat.
  9. Bake in the preheated oven for 12 to 15 minutes till slightly golden.
  10. Remove from oven and let cool on wire racks.
  11. Bite into heavenly, chewy healthy oatmeal date cookies and enjoy them with your evening chai or coffee!!
  12. Store leftovers in airtight containers.
  13. Enjoy!!!

Notes

Instead of plain white sugar, you can use raw turbinado sugar too.

If vegan, then substitute the one egg with flax meal. Just mix 1 tablespoon of flax seed powder in 3 tablespoons of water and set aside 5 minutes before use.

For a smoother bite, you can powder half of the oatmeal and then use....totally optional.

For added nutrition and flavor, you can add some cinnamon powder too in the cookie dough.
