HEIRLOOM TOMATOES AND AVOCADO TARTINES

Heirloom Tomatoes and Avocado Tartines are French style open faced sandwiches layered with fresh, juicy heirloom tomatoes, ripe and healthy avocado with hot and spicy mayonnaise.

Every month, our gourmet Facebook group “Healthy Wellthy Cuisines” meets bimonthly online to share our recipes based on a particular theme. This time it was "sandwiches".

Traditionally a sandwich is something that has a spicy or savory filling between two slices of bread; either French bread, white, whole wheat, rye, brown etc. They could be fresh sandwiches or grilled until toasty.

I have always loved the freshness and versatility of open faced sandwiches, so I decided to make a French style tartine which has only 1 slice of bread!

WHAT IS A TARTINE?

The French call a single slice of toast “tartine” which is toasted and then piled with either just jam or butter and most times a plethora of fresh seasonal toppings! They enjoy it for breakfast, dinner or as an appetizer too!

This French style “sandwich” highlights the variety of seasonal toppings normally easily available. Basically, it is a toast which serves as a blank canvas for whatever your palate desires!

WHAT ARE THE POSSIBLE TOPPINGS?

There are no rules to making a tartine. It could be as simple as spreading some soft butter or jam or a drizzle of honey over a crispy toasty slice of bread. It also could be just a few slices of fresh tomatoes with a sprinkling of sea salt and pepper.

Basically, a tartine is defined as a slice of toasted bread piled high with your favorite combination of toppings; sweet or savory. One of my favorite sweet toppings is Nutella with slices of bananas! Sounds divine, doesn’t it?

SOME SUGGESTIONS FOR TOPPINGS:

  • Fresh, juicy tomatoes
  • Avocados
  • Cucumbers
  • Onions, preferably red onions
  • Dill pickles
  • Pickled jalapenos
  • Fresh jalapenos
  • Ricotta cheese
  • Cottage cheese
  • Nutella
  • Cream cheese
  • Peanut butter
  • Fruits like plums, apricots, bananas, mangos, strawberries etc.
  • Fig and honey
  • Fresh greens and herbs

The choices are endless depending upon the availability of seasonal vegetables and fruits. Let your imagination go wild!

I have used fresh heirloom juicy tomatoes, ripe, heart-healthy avocados with a spicy sambal olek mayo and Provolone cheese. You can use any topping you have in your fridge and pantry. Just slice, cut, chop your toppings and lay them out on plates on the breakfast/dinner table along with your favorite condiments or spreads.

Toast thick slices of your favorite kind of bread (I have used multigrain French bread) and let the family pile on their favorite toppings to make their own mouth-watering and satisfying tartine!

Eat them as such or cut them into smaller pieces and serve as appetizers.

Have fun making this and enjoy toast the way the French do! These make for a fun and interactive crowd pleaser at parties, gatherings etc.

Top your favorite slice of bread with anything you like. Use colorful ingredients and present them on beautiful platters; they are sure to be a hit any time!

HEIRLOOM TOMATOES AND AVOCADO TARTINES

Heirloom Tomatoes and Avocado Tartines are French style open faced sandwiches layered with fresh, juicy heirloom tomatoes, ripe and healthy avocado and hot and spicy mayonnaise.

Ingredients

  • Loaf of bread, sliced and toasted; 8 slices (white, wheat, whole grain, sourdough, French, rye etc.)
  • ½ cup mayo plus 1 to 2 tbsp sambal olek/any hot chilli sauce/Sriracha sauce
  • 2 large avocados, peeled, pitted and cut into thin slices
  • 4 large juicy Heirloom tomatoes, thinly sliced
  • ½ cup cottage cheese
  • 8 slices Provolone/processed/or your favorite sandwich cheese slices
  • Few large Jalapenos, cut into roundels
  • Coarse sea salt
  • Black pepper powder
  • Seasonings like salad supreme/mixed herbs/pizza seasoning etc.
  • Few Onion slices, thinly sliced
  • Few coriander leaves/cilantro
  • OPTIONAL TOPPINGS:
  • Bottle dill pickles, sliced
  • Cucumbers
  • Figs
  • Banana slices
  • Apple slices
  • Fresh mozzarella slices etc.

Instructions

  1. Mix ½ cup mayonnaise with 2 tbsp of hot chilli sauce or sambal olek or Sriracha sauce.
  2. Toast bread slices in a toaster until lightly crispy and toasty.
  3. Cool slightly.
  4. Spread a thin layer of hot and spicy mayonnaise over the toast.
  5. Place a slice of cheese (cut into pieces if needed to fit the toast) over the mayonnaise.
  6. Gently layer the slices of tomatoes, avocados, jalapeno, onion, cilantro leaves etc. over the cheese slices.
  7. Sprinkle your favorite seasoning over the whole toast.
  8. Sprinkle salt and pepper to taste.
  9. If you like, spoon some cottage cheese over a few slices.
  10. Serve immediately!
  11. Enjoy toasty, fresh tomato and avocado tartine or French style open faced sandwich for breakfast, brunch, as an appetizer or even dinner!

Notes

Use any of the toppings mentioned above in the post.

You can use chopped nuts, meat or seafood slices etc. too.

    Oh I love this kind of open ones. So easy and quick than other I feel always   The use of tomato and avocado combo is so simple yet looks so delicious topping 🙂
