Homemade HARICOT/NAVY BEAN BURGERS – an easy, healthy and homemade veggie burger with potatoes, white beans (haricot beans), aromatics and spices; you will never miss the meat/chicken!
This month’s challenge for our Facebook group “A to Z Recipe Challenge” started by my wonderful blogger friends Jolly and Vidya is the letter "H". Every month, some of us participate in this theme and challenge ourselves to come up with dishes pertaining to that month’s letter.
I had just made a spicy, homemade vegetarian burger sandwich for my family using white dry beans (I used a can of cooked beans) and potatoes along with onions, cilantro and some basic spices to suit our Indian palate; a complete whole meal on a bun with carbs, proteins and veggies!
When this theme came up, I was overjoyed as white beans are also called “Haricot beans”, Boston beans or Navy beans and hence this vegetarian burger fit the theme perfectly! These dry white beans (that look like small white rajma) are easily available in any Indian store!
Who does not like burgers but the more popular ones are made with chicken or meat and sometimes fish. With lots of people becoming vegan or vegetarian, you do see restaurants and grocery stores offering variations of veggie burgers using either highly processed or a multitude of ingredients!
I love to make simple yet delicious and healthy vegetable burgers using simple plant based ingredients. Some of them which we enjoy often are:
Making this mouthwatering and healthy vegetarian bean burger is absolutely easy: just mix mashed potatoes, cooked beans, onions, green chilies/jalapenos, cilantro and some spices like coriander powder, turmeric and garam masala powders. Make patties and either deep fry, shallow fry or pan fry until golden brown and crisp.
Sandwich these crispy and crunchy patties between burger buns slathered with a spicy mayo sauce (just mix mayo with some hot sauce or ketchup) along with your favorite fresh veggies like tomatoes, onions, lettuce leaves etc. and enjoy! If vegan, use a vegan mayo or sauce to spice up your burger.

Homemade HARICOT/NAVY BEAN BURGERS – an easy, healthy and homemade veggie burger with potatoes, white beans (haricot beans), aromatics and spices; you will never miss the meat/chicken!
Ingredients
- 4 to 6 burger buns (white/whole wheat/multigrain)
- ¼ cup of salted/unsalted butter
- 3 large potatoes, boiled, peeled and mashed
- ½ cup chopped onions
- 1 green chilli/jalapeno, finely chopped (optional)
- 1 cup of cooked white beans or Haricot beans
- Handful of freshly chopped cilantro/coriander leaves
- 1 tsp Kashmiri red chili powder
- 1 tbsp coriander powder
- 1 tsp garam masala powder
- 1 tsp amchur/chaat masala powder
- ¼ to ½ tsp haldi/turmeric powder
- ½ tsp ¾ cup bread crumbs (or use 2 to 3 large slices of soaked bread with crusts removed)
- Salt to taste
- ½ cup mayonnaise (with or without eggs)
- 1 to 2 tbsp tomato ketchup (you can use any ketchup like tomato-chilli or plain)
- 1 tbsp Sriracha hot sauce
- 2 to 3 tbsp rice flour, mixed with some water, salt, pepper and dried herbs
- Semolina or suji as needed
- Oil for shallow frying (any cooking oil of you choice)
- OTHER INGREDIENTS NEEDED TO MAKE THE BURGER:
- Tomato slices
- Onion slices
- Lettuce leaves
Instructions
- Pan grill or roast sliced burger buns on a griddle using some butter (or even oil). Set aside.
- Mix mayo and sauces to form a thick and delicious burger sauce; set aside.
- In a large mixing bowl, mix mashed potatoes, beans, onions, cilantro and spices – red chili powder, turmeric powder, chaat masala or amchur powder, garam masala powder and coriander powders.
- Add salt to taste and mix (mashing the beans well) to form a smooth and even mixture.
- Make burger patties (gather to form a large ball and flatten slightly so that the patty fits the size of the burger bun).
- Chill the patties in refrigerator for about 30 minutes (optional) until the rest of the elements of the burgers are ready.
- Now, make an assembly line of rice flour slurry and semolina in two bowls.
- Heat a saucepan and add oil that is needed for shallow frying.
- Once the oil is hot, dip the patties first in the rice slurry, then the suji and shallow fry until golden brown and crispy on all sides; about 3 to 4 minutes.
- You can also shallow fry the patties without the coating for a different texture of the burger bean patty.
- Once the bean burger patties are ready, layer in between burger buns (slathered with mayo sauce) along with slices of tomatoes, onions and lettuce leaves.
- Enjoy a healthy, homemade, spicy and Indian flavored white bean burger or Haricot bean burger with a tall glass of healthy fruit juice, hot cup of adrak/ginger tea or coffee and sides of either crisp potato chips, French fries or any other side you like!

Notes
Adjust the amount of spices according to personal taste.
You can vary the type of spices used to make different flavors of burgers.
The same burger can be made using any other cooked beans or chickpeas etc.
Leftover bean patty dough can be refrigerated for a couple of days to make fresh burgers whenever you like. You can just enjoy the potato-bean patties or cutlets with some ketchup as a snack too!
STEP-WISE INSTRUCTIONS TO MAKE HARICOT/NAVY BEAN VEGGIE BURGERS:
Pan grill or roast cut burger buns on a griddle using some butter (or even oil). Set aside.
TO MAKE THE MAYONNAISE SAUCE:
Mix mayo and sauces to form a thick and delicious burger sauce; set aside. If needed, dilute with some water or to make it more flavorful, some bottle pickled juice (like from a bottle of dill pickles)!
TO MAKE THE BEAN BURGERS:
In a large mixing bowl, mix mashed potatoes, beans, onions, cilantro and spices – red chili powder, turmeric powder, chaat masala or amchur powder, garam masala powder and coriander powders.
Add salt to taste and either bread crumbs or moist slices of bread (crust removed); mix (mashing the beans well) to form a smooth and even mixture.
Make burger patties (gather to form a large ball and flatten slightly so that the patty fits the size of the burger bun).
Chill the patties in refrigerator for about 30 minutes (optional) until the rest of the elements of the burgers are ready.

Sneaking protein rich beans into the burgrr patty is just brilliant ! Only mom's can do this. The burgers look absolutely delicious and I am sure they will make a good snack for my son's play date. I will make them with rajma or chole though as I am not sure if I get hold of these beans here.

Absolutely delicious and a great way to include beans for kids. I love beans of all kinds. Haricot Beans are mostly available here (the fresh variety) during winters so I freeze some along with green peas. I normally add it to my salads or Kootu but now the patties idea is quite intriguing. Shall try these. Loved the recipe.

Thanks dear!! Yes you can. It is nothing but the white dry beans (small variety) you get in stores that look like white rajma. I get those in Mysore at local grocery stores and they are called "thingalavaro", a Konkani word. Do look around dear, I am sure you will find it. If you cannot, you can use even chole chana or even red small rajma to make the burgers.
