Mooli Upkari Recipe/White Radish Stir Fry with Greens

Mooli Upkari is a simple stir fry with fresh white radishes and the greens that come along with it for added crunch and its abundant health benefits. This delicious stir fry goes great with a bowl of hot steamed rice and some dal or even with chapattis, rotis etc.

During my days living in New Delhi, this healthy vegetable was available in abundance, especially during the winter months. Every vegetable vendor had mountains of this fresh, white powerhouse of nutrition with all its glorious green leafy tops!!! That was the first time I had come across white radish.

Radish is not a vegetable savored by most because of its pungent smell and sometimes bitter taste. But once you taste my mother-in-law's stir fry recipe with radish and its leaves, you will love it as much as I did when I first tasted it.  I loved the crunch of the leaves in every bite, the sweetness jaggery gave to the dish and how can I explain the healthy glow I felt inside after a lunch of rice, dal and this delightful vegetable stir fry.

You will be surprised how simple this stir fry is.  Wash the radishes and leaves.  Peel the radish and finely chop both the radish and leaves and cook in a tempering of mustard seeds and red chillies with salt to taste and a little jaggery to cut into any bitterness of the radish to give it a balanced flavor!!! That is it.

Nowadays, unfortunately, most of the vegetable vendors sell white radishes without the leaves. So, the next time you come across this amazing healthy vegetable with its leaves, do not throw away the greens and do not allow the vendor to cut it out before giving you the radish. Insist on the leaves too and make this tasty stir fry to serve with your next meal. Serve it hot and fresh with hot steamed rice and dalithoy or even chapatis or rotis!!!!

Mooli Upkari Recipe/White Radish Stir Fry with Greens

A simple stir fry with fresh white radishes and the greens that come along with it for added crunch and its abundant health benefits. This delicious stir fry goes great with a bowl of hot steamed rice and some dal or even with chapattis, rotis etc.

Ingredients

  • 2 white radishes/mooli (along with the greens attached)
  • 2 to 3 dry red chillies
  • 1 teaspoon mustard seeds
  • 1 to 2 teaspoons jaggery(unrefined sugar)
  • 2 teaspoons coconut oil

Instructions

  1. Separate the leaves from the radish. Wash them thoroughly in plenty of water till it is clean and free of any stones, dust or dirt.
  2. Chop them finely.
  3. Peel the radish and chop into small cubes.
  4. Heat a large deep pan or kadai.
  5. Add coconut oil and once it is hot, add the mustard seeds.
  6. As soon as the mustard seeds start spluttering, add the red chilies (cut into 2 to 3 pieces) and stir fry for a few seconds. Do not let it burn or they will turn bitter.
  7. Immediately, add the chopped radish along with the chopped leaves.
  8. Stir in salt to taste and some jaggery; mix well.
  9. Cook on medium high covered. Do not add any water unless you see it getting dry(just sprinkle some when needed).
  10. Do a taste test in between to adjust the salt and jaggery.
  11. Keep stirring till slightly cooked (it should be tender but still have a crunch to the leaves and chopped radish).
  12. Serve hot radish upkari with hot steamed rice and dal or even with rotis or chapattis (Indian flatbreads).

Notes

If you cannot find radish leaves(along with the radish), you can make it just with radish.

Instead of dry red chillies, you can use red chilli powder/cayenne powder.

How to make Mooli Upkari with step-by-step method:
