HOMEMADE VEGGIE BURGERS
Everybody loves burgers.
The more popular ones are chicken burgers or fish burgers and for meat lovers , you have the hamburgers.
For the vegetarians, choice of burgers outside is limited to a potato patty sandwiched between two halves of a burger bun with some mayo or any other sauce to flavor it!!
(Nowadays of course you may get a larger choice with many people being vegan and/or vegetarian)!
Most often, whenever I have plenty of time, I prepare potato patties(with lots of vegetables) like spicy potato tikkis/cutlets or aloo tikkis, served with ketchup or green coriander chutney, for an evening snack to enjoy with my tea.
If I have burger buns lying in my pantry, I prepare extra tikkis/cutlets and enjoy these as a burger filling to make vegetarian burgers for dinner!!

Today, I had two packets of mushrooms lying in my refrigerator, so I decided to make my mushroom stir fry which I often make for my family, as a filling for my burgers.
I make it a point to make lots of it as my two boys (and hubby) love to eat the leftover stir fry on the side!!
HOW TO MAKE THESE DELICIOUS MUSHROOM BURGERS
Making the burgers involves only 4 steps;
- Making the coleslaw; a mayo based cabbage and carrot salad (recipe here)
- Preparing the mushroom stir fry
- Prepping the other fillings (sauces, tomato, lettuce and onions)
- Assembling the burgers.
If the coleslaw is ready, mushroom veggie burgers can be ready in 10 to 15 minutes.
(Coleslaw takes only 10 minutes to make and needs about ½ an hour to chill and develop the flavors in the refrigerator or if you are short on time, you can eat it right away),

Toppings for the burgers can range from cucumber slices, ketchup, jalapeno slices, mustard sauce, olives, grated carrots etc.
My family loves the McDonald's type sauce in their burgers with mayo, sriracha or any hot sauce (even spicy ketchup) and maybe a dash of vinegar.
(Recipe for the McDonald's sauce:
Just mix or whisk some mayonnaise (with or without eggs, vegan etc.), a dash of hot sauce (I love using spicy tomato ketchup, any bottled hot sauce like Schezwan sauce/chutney or even a dash of Sriracha sauce) and some vinegar or brine from a dill pickle jar.
Adjust the amounts to suit your taste of the sauce.
Chill and enjoy in any burger).
Serve this juicy burger with a side of chips or French fries and a glass of your favorite drink!

Ingredients
- 200 gm button mushrooms
- 1 small onion, sliced/chopped
- 2 cloves garlic, finely minced or chopped
- 1 green chili, finely chopped
- Or
- ½ teaspoon chili flakes
- Dash of dry oregano leaves
- 1 to 2 teaspoons soy sauce
- 1 teaspoon chili paste, tomato ketchup or Siracha sauce
- 1 to 2 teaspoons oil and/or butter
- Salt to taste
- 2 burger buns
- Few slices of onion rings and tomato
- Coleslaw
- Chili sauce (Sriracha sauce or any red chili sauce)
- Iceberg or salad lettuce leaves
- Butter for toasting the burger buns
Instructions
- Wash, clean and slice the mushrooms.
- In a small saucepan, heat the oil or butter.
- Add the sliced onions and green chili or flakes and sauté for a few seconds.
- Add the garlic and fry for a few seconds more to remove the raw smell.
- Add the sliced mushrooms, salt, soy sauce and chili sauce and sauté on high for about 2 to 3 minutes till the mushrooms start cooking but do not allow it to wilt too much.
- Turn off the heat and remove the mushroom stir fry from the pan.
- Slice the burger buns into two horizontally.
- Heat a griddle or dosa pan. Apply butter to the cut sides of the buns and toast on the pan till light brown and slightly crisp.
- Remove from the pan.
- In a serving plate, place the toasted burger buns. On one of the halves, place a leaf of lettuce, spoon some mushroom stir fry on top, layer the coleslaw on top of the mushrooms.
- On the other half of the burger bun, layer the slices of tomato and onion rings.
- If you need extra spice, drizzle some red chilli sauce or sriracha sauce over the coleslaw.
- Put the half of the bun with the tomato and onion slices on top of the other half and serve immediately with potato chips and a tall glass of juice on the side.
Notes
Adjust the amount of spices to suit your taste. Fillings can be changed to your choice. Enjoy!

Note:
- The toppings you can add on your burger is unlimited; cucumber, jalapeno slices, olives, mustard, cheese slices etc.
- If you don't like mushrooms, substitute bell pepper/caspicum, tofu, paneer (Indian cottage cheese) etc.
