Strawberry Preserves with Chia seeds is a simple, quick and healthy spring time fruit preserve made with absolutely no sugar and ready in 7 to 10 minutes. Chia seeds are all you need to thicken and add more nutrient value to the preserve.
Every trip to the grocery store and you will see me piling up cartons of fresh, red strawberries into my grocery cart. I love to snack on these healthy berries all day and my husband loves to top his cereal bowl with juicy red chunks of them!
With about 5 cartons of these, I was so excited to use of a couple of them in this simple sugar-free super easy and super quick strawberry preserve; a dish I have wanted to make for a long time!
I was always intimidated by the process of making jam. I abhor toiling over a hot stove, waiting for the jam to gel up and thicken. This preserve needs only 7 to 10 minutes of your time and you have a thick, healthy mildly sweet fruity preserve! Looks like a winner to me!
All you need is fresh strawberries, honey (just enough to sweeten the preserve; no sugar here!), a squeeze of lime or lemon, with some lemon/lime zest for more zing and some healthy chia seeds to thicken it.
If you do not have strawberries, use any other juicy fruit like mangoes, pineapple or even orange!
Mash chunks of strawberries with some honey until slightly mushy and cooked; about 7 minutes. Stir in chia seeds (as little or as much as you want) and cook for a couple of more minutes.
You will start to see it gel and thicken the natural way without any pectin or artificial thickening agent.
Remove from stove, cool and enjoy fresh, healthy no-sugar strawberry preserves with a slice of bread, over crackers or even to make some crispy, buttery jam cookies!

2-Ingredient Strawberry Ice Cream
A simple, springtime fruit preserve with honey and chia. With no sugar, this is the perfect spread to slather on any bread for a super healthy morning!
Ingredients
- 3 cups chopped strawberries (fresh or frozen)
- 1 tsp lime/lemon juice plus zest
- 2 to 3 Tbsp pure honey or maple syrup
- 1 to 2 Tbsp chia seeds
Instructions
- In a small saucepan, add the strawberries and heat on medium heat; simmer, stirring occasionally.
- You will notice, the fruit softening. Add the honey.
- Smash the fruit with a fork into a small chunky texture.
- Once the berries are broken down, stir in lemon/lime juice until combined.
- Add chia seeds and continue cooking for few a couple of more minutes.
- Turn off the heat. Let the skillet sit for about 5-7 minutes until the chia seeds thicken the jam.
- Cool well, and transfer to a jar and refrigerate; the texture will set even further when chilled.
Notes
• Refrigerate for up to 2 weeks. • Adjust the amount of chia seeds and honey to suit your taste • It will thicken as it cools, so do not cook on stove too much.
