POMEGRANATE LASSI, a refreshing, healthy yogurt based Indian drink with just 2 ingredients, yogurt and pomegranate!
NOW, WHAT IS LASSI?
Lassis are the quintessential north Indian yogurt based drinks with thick yogurt blended with a myriad of ingredients to make a refreshing and cooling summery drink.
In the southern part of India, we make a more diluted savory version using green chilies, cilantro and either fresh ginger or hing/asafetida powder!
Yogurt or dahi as it is called here is blended with different spices and aromatics to make savory lassis or fruits to make sweet lassis.
With summers almost here, having something cool and satisfying to drink sounds wonderful! Yogurt is something we always have in our fridge; either to make raitas or just as a side with our Indian meal.
Our current passion is lassis! Traditionally, my mother used to make savory lassi with green chilies, cilantro and some hing/asafetida powder blended. Fruit lassis were not something I knew about when I was growing up!
But now, being a food blogger and all, those brain cells are always looking out for different variations of all dishes and lassis are not far behind.
SUPER FOOD POMEGRANATE:
Who doesn’t love pomegranates? Those gorgeous ruby red pearls of sweetness, juiciness are not only our favorite fruit to enjoy but do you know they are loaded with nutrients; has anti-inflammatory properties , has more antoxidants than green tea or even red wine and thins your blood; excellent in preventing heart disease?
To add to that, they are rich in vitamin C, Potassium and fiber and the seeds have most of the fiber. So it is always good to eat it as a fruit. But sometimes, indulge in it as a lassi too!
POMEGRANATE LASSI:
I came upon this version of lassi when I was trying to make a refreshing drink for lunch. I had run out of all fruits and all I had was a couple of pomegranates. I thought why not, and ended up peeling, removing those juicy gorgeous pearls and blitzing them with a cuppa thick yogurt!
It turned out into this gorgeous, pink and pretty drink! One taste of it and I was flabbergasted; so sweet, refreshing and delicious without any sugar or salt!
But if the yogurt is sour or if the fruit is not so sweet, feel free to stir in some honey, sugar or maple syrup.
For the Indian in me, I decided to add a dash of roasted cumin seed powder and a pinch of salt (pink salt) for a sweet and salty taste.
That is it! You are just 2 ingredients away from a refreshing, healthy, cooling and delicious glass of Indian style pomegranate lassi!
Just blend yogurt with pomegranate; that is it! If the seeds are too hard, strain through a large holed strainer but if you want the extra fiber, leave it unstrained. If giving it to kids, do strain the lassi; easier to sell it to them for later consumption!
You will not believe it, with pomegranates always in the market, a couple of glasses of sweet, refined sugar free pomegranate lassi is on my lunch table almost every other day!
Do make this with your next pomegranate and enjoy this summer in a refreshing and healthy way!
UPDATED APRIL 21, 2020:
Like I said, pomegranate lassi is our favorite thirst quencher nowadays. But today, when I was baking my favorite chocolate cake "Chocolate Beetroot Cake", some beet puree was left over and what do you know, another pomegranate lassi but with the addition of some beetroot puree! Just boil or steam beets, peel and puree!
Blend puree, pomegranate and yogurt; that is it!
Just look at that all-natural color!! Just 3 ingredients and my hubby and I were deciding who gets the last bit of lassi in the blender jar 🙂
Happy and Healthy Drinking!
