Royal Tea Sandwiches (My 300th Post!)

May 17, 2018 by curryandvanilla 2 Comments

Royal Tea Sandwiches; make these dainty fresh finger tea sandwiches to celebrate the Royal wedding of Meghan and Harry.

With the infamous and unique royal wedding coming up, every TV channel seems to be competing with each other to share and highlight every aspect of the upcoming wedding with all the gory and interesting details of anything and everything about everyone involved in the wedding!

Food is going to play a big part on this occasion what with beautiful cakes, biscuits, puddings etc. being some of the dishes on the menu!

Why am I sharing these lovely sandwiches with you:

To be part of this festive mood and feel very “proper and prim” like the British as well as celebrate my 300th post,  I am serving up these dainty sandwiches which will set the scene for a royal feel!

Thank you so much everyone for being a part of my exciting journey!  I could not have gotten this far without your support, love and appreciation!

Now, on to the sandwiches:

To, begin with, how about some lovely and fresh dill mayonnaise and cucumber sandwiches?  Sounds divine! Don't you agree?

Maybe a few green cilantro chutney and tomato sandwiches for the spice lovers out there!

And for the sweet tooth in you, some chocolate hazelnut and banana with peanut butter sandwiches will set the mood and atmosphere!

They are so simple to make and need no cooking! Rustle them up ahead of time and just brew some hot tea or if you prefer coffee and enjoy with your family and friends.

Pour up some hot tea, serve up some lovely cookies or “biscuits” as the British call it, and feel royal and very “British”!

What do you need to make these:

All you need is some fresh bread, cucumber, mayonnaise and dill for the savory bites. Blend a spicy cilantro chutney or use your favorite bottled variety to make the tomato sandwiches. Slip in some cheese slices for flavor and it adds protein too!

Do not forget to butter the slices or you are going to end up with soggy sandwiches from the chutney and cucumber! Butter acts as a barrier and keeps the bread from getting soggy.

Although, chocolate is not a traditional British thing in sandwiches, I could not resist including my favorite  chocolate spread, hazelnut chocolate spread as a filling with some fresh banana slices!! To add some crunch, nothing like a thin spread of crunchy peanut butter (I am not a big fan of the smooth variety). Mmmm, now that I love!

Cut them into different shapes with a sharp knife (remove the crusts), wrap them in plastic and refrigerate until ready to serve!

To complete the tea party menu, make some cookies or biscuits like the very-British Homemade Digestive Biscuits or a lovely, scrumptious make-ahead fruit custard trifle or pudding!

I have served these dainty, royal-like finger tea sandwiches with hot adrakwali chai/ginger-spiced tea and some homemade Eggless Peanut Butter cookies.

  • 1 small bunch of Coriander leaves
  • 2 Green Chillies
  • 2 Cloves of garlic
  • 1 tbsp Coconut gratings

  • Salted butter, softened
  • 1/2 cup peanut Butter (crunchy or creamy)
  • 2 large Bananas, peeled and sliced

  • Few pickled jalapeno slices (bottled and store bought)
  • Few cheese slices
  • Black Pepper powder

Instructions

    Make the dill mayonnaise:
  1. Add finely chopped dill leaves to the mayonnaise and give it a good mix. Keep aside.
  2. Make the coriander chutney:
  3. Blend all the ingredients needed for coriander chutney to a fine paste, remove and place in a bowl.
  4. Adjust seasoning.
  5. Make the cucumber-dill sandwiches:
  6. Take 2 large slices of bread and lay them side by side. Spread butter on one of the slices.
  7. Sprinkle required amount of pepper powder on the buttered slice and layer the slices of cucumber over it. Slather the other slice with dill mayonnaise. Cover this slices over the other gently; cucumber tea sandwiches are ready to be cut!
  8. Make the banana sandwiches:
  9. Spread Nutella on one slice and peanut butter on the second slice of the sandwich.
  10. Layer the sliced bananas over the nutella slice. Place one slice over the other.
  11. Elvis style banana-peanut butter sandwich is ready to be cut into finger sandwiches!
  12. Make the coriander-tomato sandwiches:
  13. Slather softened butter over 2 slices and then spread some coriander chutney over one of the slices.
  14. Layer tomato slices over the chutney side and sprinkle pepper powder over the other.
  15. Layer cheese slices over the other buttered side of bread and top with jalapeno slices. Place one bread slice gently over the other.
  16. Tomato-jalapeno with cheese sandwich is ready to be sliced into finger sandwiches!
  17. Gently, cut off the crusts of all the sandwiches and then cut into two or three (depending upon how big your bread slices are) again to make bite-sized finger sandwiches each.
  18. Either wrap in plastic wrap and chill in refrigerator or serve right away with a hot cup of tea or coffee!
  19. A side of biscuits or cookies completes the English style tea setting! Enjoy!!!

Notes

Try to keep the coriander chutney dry or with less moisture to avoid soggy sandwiches. Customize these sandwiches with other ingredients according to your preference.

Do not forget to butter the slices before layering the fillings; helps in keeping the sandwiches from getting soggy!
