Baked French Fries - Extra crispy outside, soft inside with the flavor of your favorite spices, and baked not fried!!! Now who would not love to bite into these “spicy oven-baked fries” for a healthier option!!
Everybody loves French fries, but the popular choice is the fried ones. I never could enjoy them but now, this baked version of the fries has made me relish this “junk food” and feel good about it as they have not been made in a pan full of oil with a greasy touch to them!!!
They stay crispy even after they cool so no more soggy leftover French fries!!
The trick is to soak them in a bowl of cold water to remove as much of the starch, which makes them crispy. I love the shoestring cut of the potatoes, but feel free to make wedges too, though you may not get too crispy a fry.
Line the baking pan with either parchment paper (easy to clean) or if using aluminium foil, grease well so the fries do not stick.
Spread the fries in a single layer as crowding will prevent them from crisping. I had already cut a large quantity of fries, so my pan got crowded, but amazingly, they still came out good!!
The fun part is, you can spice them with any flavor you want, Indian – coriander powder, cumin powder, garam masala; or just plain dried herbs with salt; any boxed spice powder and salt; let your imagination go wild and taste buds guide you to your favorite combination!!!
Goes great as a side for chickpea masala veggie burgers, teatime, with coffee or any meal!!
Ingredients
- 3 to 4 large potatoes, washed, scrubbed clean and dried
- 3 to 4 tablespoons oil
- 1 teaspoon chilli powder
- 1 teaspoon garlic powder
- ½ teaspoon pepper powder
- 1 teaspoon dried mixed herbs
- Salt to taste
Instructions
- Preheat oven to 450 degrees Fahrenheit.
- Line a large baking pan with parchement paper.
- Wash, clean, peel and slice the potatoes into match sticks or shoe strings or if you prefer, wedges.
- Put these potatoes into a bowl of cold water after washing them again for a couple of times to remove as much starch as you can. Soak them for at least 30 minutes.
- Drain the potatoes and dry them well using a paper towel.
- Place them in a bowl. Stir in the oil, spices, herbs and salt and toss well to coat the fries with all the dry seasonings.
- Layer them as much as possible in a single layer into the baking pan (cut too many for the pan, so a bit overcrowded!!).
- Bake for about 30 to 45 minutes, stirring them halfway, till crispy.
- Serve hot with ketchup or any dip of your choice.
