Watermelon-Coconut Popsicles, the perfect guilt-free, low-calorie treat, especially during the hot summer months!
Come summer and with the scorching heat, everyone reaches out to something frozen and refreshing to cool them down. I love my fresh juices, ice creams, frozen yogurts, smoothies or milkshakes anytime but nothing like a pop of frozen healthy fruit!
Fruit popsicles are a perfect healthy, low-calorie treat you can indulge in guilt free! One of my favorites is mango flavored; mango mixed fruit popsicles and spicy Mexican Mango Paletas!!
Of course, with the plethora of fruits available during summer, sky is the limit! Today, watermelon is the fruit of the day! Nothing like a large bowl of chilled watermelon chunks to dive into any time! If frozen, mmm, loving it more!
Homemade popsicles are way too easier than you think! Just freeze some fruit juice in popsicle moulds, that is it! This recipe is super easy to make. It requires just 2 ingredients; watermelon and coconut milk (and some honey, sugar, agave or maple syrup if the watermelon is not too sweet)!
Blend some deseeded watermelon chunks and freeze them either in popsicle molds, kulfi molds or even in paper cups (remember to pop in a wooden stick when slightly frozen!).
I wanted to make it a bit creamier, so added a few tablespoons of coconut milk! Add as much as you want; the more the creamier!
My watermelon was not too sweet, so I added a dash of honey. You can use sugar, agave nectar or maple syrup too.
Just blend, pour in popsicle molds and freeze. The hard part is waiting for them to freeze! That is where the magic happens!
If you are impatient, just drink it up! One sip of this and we were so amazed at the creaminess of watermelon-coconut juice! Do try this variation too!

Ingredients
- 2 cups chopped watermelons (deseeded)
- 3 to 4 tablespoons coconut milk
- 2 tablespoons honey/maple syrup (optional)
Instructions
- Blend watermelon, coconut milk and required amount of honey/maple syrup/agave nectar in a blender until smooth.
- At this stage, you can choose to strain if you find some seeds still in the pulp.
- Pour into popsicle moulds and freeze for 4 to 6 hours to set completely.
- Just before serving, run the molds under running warm or dip in a bowl of warm water for a few seconds until you can unmold easily.
- Enjoy refreshing, healthy and vegan (if using maple syrup or ageve nectar) any time to cool you down or as a healthy low-calorie frozen treat!
- Store extras in the freezer, though tastes best fresh!
Notes
Use any fruit you have in your kitchen to make these easy fruit pops.
Make these only with juice if you do not have coconut milk.
Make sure to deseed the watermelon before blending.
Straining the blended juice is optional.
