This recipe makes a small batch, just 10-12 cookies; just enough to indulge in; satisfy your sweet cravings and all gone before you start binging on them!
One bite of this soft yet crumbly cookie and my hubby was like, “this is good”! That was enough for me to do a happy dance!
Do try this easy peasy one either with store bought or even homemade nut butters. But make sure they are sugar free, oil free and preferably natural.
(If you use ones with sugar, then try and reduce the sweetener)

But when you are craving for one like right now, then this is the one for you! Like I said, easy peasy and delicious. Make it with peanut butter or almond butter like this one.
Now, to this easy and quick recipe or as we Indians say, “Jhatpat” one!
3 INGREDIENT EGG FREE AND VEGAN COOKIES
Yes, this one needs only 3 ingredients….
- Peanut butter or Almond butter (I made both); unsweetened, and totally natural (yet to try using other butters)
- Oat flour (can make your own; just blitz oats in a blender to a fine powder)
- Sweetener (I use Jaggery syrup; you can use honey or maple syrup instead)
That is it!
Just mix to form a dough, shape into small balls, make criss cross markings with a fork and bake!
In just 12-15 minutes, you get to sink your teeth into a soft, buttery, crumbly cookie which has minimal sugar, is high in protein and fiber and is delicious too!

HOW TO MAKE 3-INGREDIENT OAT COOKIES (PEANUT BUTTER/ALMOND BUTTER)
Preheat oven to 180C or 350F.
Line a baking pan with parchment paper or grease and set aside.
Now gather the ingredients; you can use peanut butter or almond butter here (will try the other butters soon)....
(If making your own oat flour, just blend/blitz some oats in a blender to a fine powder).
Time to make the dough.
Transfer ½ cup of oat flour into a mixing bowl.
Add ½ cup natural, unsweetened peanut butter and 2 tablespoons (or as per your taste) jaggery syrup or maple syrup.
Mix to form dough that is smooth; add more sweetener or oats if needed.
Shape into medium sized balls and place on the prepared baking sheet.
Flatten slightly by making criss cross marks/indentations with a fork and bake at 350F/180C for 12-15 minutes or until the cookies turn light brown at the edges.
Remove from oven and let cool on pan for 5 minutes, then gently transfer to a cooling rack to cool completely.
Enjoy!!

Ingredients
- 1/2 cup Peanut butter/Almond butter I used a slightly runny and a sugar free, natural PB
- 1/2 cup Oats flour Blended my own from whole oats; rolled or quick cooking 1/2 cup; adjust amount to form soft dough.
- 1/8 cup Maple syrup (2 Tbsp)
- OR
- 1/8 cup Thick jaggery syrup (2 Tbsp) homemade
Instructions

Recipe Notes
- Adjust the amount of oat flour to make a dough that can be shaped into small balls.
- Use either jaggery syrup (I just melted some jaggery with a splash of water and then used that) or maple syrup.
- You can use either peanut butter or almond butter. I am yet to try using other nut or seed butters.
- Double or triple the recipe to make a larger batch of cookies.
