Ingredients
1/2cupPeanut butter/Almond butterI used a slightly runny and a sugar free, natural PB
1/2cupOats flourBlended my own from whole oats; rolled or quick cooking 1/2 cup; adjust amount to form soft dough.
1/8cupMaple syrup (2 Tbsp)
OR
1/8 cupThick jaggery syrup (2 Tbsp)homemade
Instructions
Preheat oven to 180C or 350F.
Line a baking pan with parchment paper or grease and set aside.
Time to make the dough.
If making your own oat flour, just blend/blitz some oats in a blender to a fine powder.
Transfer ½ cup into a mixing bowl.
Add ½ cup natural, unsweetened peanut butter and 2 tablespoons jaggery syrup (or maple syrup).
Mix to form dough that is smooth; add more sweetener or oats if needed.
Shape into medium sized balls and place on the prepared baking sheet.
Flatten slightly by making criss cross marks/indentations with a fork and bake at 350F/180C for 12-15 minutes or until the cookies turn light brown at the edges.
Remove from oven and let cool on pan for 5 minutes, then gently transfer to a cooling rack to cool completely.
Enjoy!!
Literally made 2 batches…total of 10 cookies each.
Recipe Notes
Adjust the amount of oat flour to make a dough that can be shaped into small balls.
Use either jaggery syrup (I just melted some jaggery with a splash of water and then used that) or maple syrup.
You can use either peanut butter or almond butter. I am yet to try using other nut or seed butters.
Double or triple the recipe to make a larger batch of cookies.
Thank you @helens_vegan_kitchen for this amazing recipe and inspiration ❤️❤️ She used maple syrup and I experimented with some jaggery syrup successfully 😋🤤😍❤️
