PASSION FRUIT SALAD DRESSING

A quick, tangy, mildly sweet and savory salad dressing with fresh home grown passion fruits and lemons; a perfect accompaniment to any salad.

Ingredients

Main Ingredients

  • 2 cups Passion Fruit Puree
  • 2 tbsp Honey/Maple Syrup
  • 1/2 cup Extra Virgin Olive Oil
  • 2-3 tbsp Lemon/Lime juice (depending upon taste of passion fruit)
  • Salt to taste
  • Crushed black pepper powder

Instructions

  1. Cut the passion fruit into 2 halves and scoop the inner pulp.

  2. Puree in a blender (blitz for a few seconds) and strain to remove the black seeds. This step is optional if you do not mind the crunchy seeds in your dressing.

  3. To this strained passion fruit juice, add honey or maple syrup, olive oil, lemon or lime juice, salt and pepper to taste and whisk well.You could blitz or blend this in a blender too.

  4. Do a taste test and adjust the amount of seasonings.

  5. For a more zing, stir in some prepared bottle mustard which we normally use in sandwiches. I did not have any, so could not.

  6. Mix well and Chill for a couple of hours. Serve with any fresh salad, drizzled on top or on the side.

Recipe Notes

  • The amount of honey and lemon juice depends upon the sourness or sweetness of the passion fruit.
  • You can use white vinegar instead of lemon or lime juice.
  • For a spicier note, you can stir in some mustard sauce/paste in the dressing.
  • Stores well in the fridge for 1 to 2 weeks; stir well with a fork or spoon before using as the dressings made at home (like any other)  tend to separate into different layers.
