Spicy Fajita Tortilla Crunch Wrap Hack

Spicy Fajita Tortilla Crunch Wrap Hack is my version of the trending Tiktok tortilla wrap hack which has mesmerized everyone with its ease and simplicity.

Ingredients

TO MAKE SPICY FAJITAS:

  • 1 cup julienned red bell peppers
  • 1 cup julienned green bell peppers
  • 1 cup sliced red onions
  • 1 cup chopped zucchini
  • ½ tsp jeera/cumin seeds
  • ¼ tsp turmeric powder
  • Dash of black pepper powder
  • 1 tsp red chili powder/cayenne pepper powder
  • 1 tsp cumin powder
  • 1 tsp Chipotle Roasted Garlic powder or use any of your favorite spice mix powders from your pantry
  • ½ to 1 tsp garlic powder or 1 tbsp grated fresh garlic
  • 1 tsp Piri-Piri seasoning powder; again optional
  • Salt to taste
  • 3 tbsp oil

OTHER INGREDIENTS FOR THE WRAPS:

  • 4 large store bought tortillas or use homemade
  • 1 cup grated cheddar cheese adjust the amount as per taste
  • ½ cup sliced tomatoes
  • Some pickled red onions or use fresh sliced red onions
  • Handful of spinach leaves for each wrap
  • 1 to 2 cups crisp tortilla or nacho chips
  • Red Mexican sauce/salsa bottled or homemade
  • Any white creamy salad dressing or mayonnaise sauce; optional
  • Some butter or oil for roasting the wrap

FOR SERVING:

  • Sour cream or thick yogurt
  • More salsa or tomato sauce

Instructions

First step is to make the fajita filling:

  1. Heat oil in a large saucepan and once hot, add jeera or cumin seeds and sauté for a few seconds.
  2. Add the sliced onions and stir fry on medium heat for a couple of minutes until slightly softened.
  3. Stir in the spices: turmeric powder, black pepper powder, garlic powder, Chipotle Roasted Garlic powder, cumin powder etc.; mix well and stir fry for a few seconds.
  4. Tip in the chopped vegetables with salt to taste and stir fry on medium high for a few minutes until the veggies are slightly cooked but with still a crunch and bite to them.
  5. Sprinkle Peri Peri masala powder, give it a good mix and remove from heat and let cool slightly.

TO MAKE THE FAJITA TORTILLA CRUNCH WRAP:

  1. First step is to layer the tortilla with your favorite fillings:
  2. Lay the tortilla on a plate or cutting board and using a knife (or you can use kitchen scissors), make one cut from the center of the tortilla to the edge.
  3. Now, visualize the tortilla as four quarters.
  4. Starting from the left and first quarter, start piling up the filling ingredients; first some fajita veggie mix, second quarter, layer grated cheese, pickled onions and tomato salsa.
  5. To the third quarter, spread some crisp nacho or tortilla chips (cut into smaller pieces). If you want your wrap to be spicier, sprinkle some more Piri Piri spice powder or any of your favorite spice powders.
  6. On the final last quarter, layer some fresh spinach leaves, tomato slices and drizzle mayo or salad dressing on top.
  7. The order and amount of fillings you pile up can be according to your preference and taste.
  8. Next, to fold the wrap, starting from the first quarter, gently fold over on to the next quarter, making sure not to spill the filling.
  9. Continue folding over the other two quarters over the final fourth quarter to create a layered quesadilla like sandwich.
  10. Now, grill this in a hot Panini press, sandwich press or on a hot griddle smeared with some butter or oil on the pan.
  11. Try and grill on medium heat, pressing gently using a flat spatula (if using the stove top griddle) until heated through and slightly grilled and toasty on both sides. I covered it with a lid to facilitate melting of the cheese!
  12. Serve immediately as such or enjoy topped with or dipped in more salsa, maybe some yogurt/sour cream or even ketchup!
  13. These fillings in my wrap actually did not need any side or dip to accompany them!

  • Not fond of the crunch from the chips? Then leave it out; will still taste awesome!
  • Best served hot just off the griddle!
