CURRIED WALDORF SALAD

A refreshing, crunchy and easy to make fruity salad with crispy apples, juicy grapes, crunchy celery and heart-healthy walnuts in a creamy no-mayo but “curried” Greek yogurt dressing; perfect as a meal by itself or as an appetizer or side with any meal.

Ingredients

  • 2 cups chopped apples I used Pink Lady crisp apples
  • 1 cup chopped celery
  • 1 cup halved black grapes
  • 1 cup walnuts
  • ½ cup halved cherry tomatoes
  • ½ cup sliced red onions

FOR DRESSING:

  • ½ cup Greek yogurt
  • 1 teaspoon or to taste Himalayan Pink rock salt or any salt
  • ½ teaspoon black pepper powder
  • 1 teaspoon curry powder or any spice mix
  • 2-3 teaspoons lemon juice

Instructions

Step 1:

  1. Toast walnuts in a pan on medium heat for 2-3 minutes until lightly toasted.
  2. Set aside to cool.

Step 2:

  1. Make the dressing.

  2. In a small bowl, mix ½ cup Greek yogurt, 1 teaspoon pink salt, ½ teaspoon black pepper, 1 teaspoon curry powder and 2 to 3 teaspoons freshly squeezed lemon juice.
  3. Do a taste test and adjust accordingly. Set aside.

Step 3:

  1. Wash and cut celery into chunks (1 cup) and halve grapes and tomatoes (1/2 cup each).
  2. Slice red onions if using; again ½ cup or as needed.
  3. Wash, core and chop apples into similar size as celery; you will need 2 cups.

Step 4:

  1. To assemble the salad, in a large bowl, mix apples, celery, grapes, tomatoes and onions.
  2. Add the dressing and toss or mix gently to coat evenly.
  3. Stir in toasted walnuts (leave some to top later if preferred).
  4. Chill the salad in the fridge for at least an hour or even two.

Step 5:

  1. Serve fresh, crunchy refreshing Curried Waldorf Salad as an appetizer, starter, side or even as a main meal!
  2. Enjoy!

Recipe Notes

  • Store leftovers in an airtight container and serve within a day or at the most.
  • Adding onions and tomatoes is optional as is using curry powder.
  • For additional flavor, nutrition and crunch, you can add raisins, dried berries, any different seeds or nuts or even some protein like chickpeas, beans, cooked chicken or fish or even some paneer or tofu chunks.
  • If you are a mayonnaise lover, feel free to use mayonnaise (with or without egg) instead of Greek yogurt or make it half and half of each.
