Makhana Energy Bites with Dates and Prunes (No Bake)

Sweetened with just dates, prunes and a dash of jaggery but overloaded with nuts, makhana or fox nuts and a dash of coconut, sesame seeds,

I know I am going to make these flavor bombs/energy shots again and again.

Absolutely addictive and so easy to make!

Ingredients

  • 2 cups Makhana/Fox Nuts Use unroasted
  • ½ cup almonds
  • ½ cup walnuts
  • ½ cup peanuts
  • ¼ cup sesame seeds
  • ¼ cup coconut powder/dessicated coconut unsweetened
  • 4 tbsp Jaggery (unrefined cane sugar)
  • 2 tablespoons ghee/clarified butter optional

Instructions

  1. Measure 2 cups of makhana and dry roast in a pan on medium low for 5-6 minutes stirring often until they turn crisp.
  2. Remove and set aside.
  3. In the same pan roast ½ cup each of almonds and walnuts for a couple of minutes. When hot to the touch, remove to a bowl.
  4. Next roast ½ cup peanuts. This may take a slightly longer time but make sure to roast on medium low. Remove and set aside.

  5. I like to leave the skin on. You may deskin the roasted peanuts if you like.

  6. Turn off the heat and roast sesame seeds (if using unroasted) and coconut in the same pan for a minute or so, stirring continuously.

  7. The heat of the pan is enough to roast and remove any excess moisture in them.
  8. Now, the next step is to blitz, grind or mix all these with dates and prunes along with jaggery powder to a coarse mixture.
  9. Just drop the roasted nuts (walnuts, almonds and peanuts with skin), roasted makhana, 15 dates, 15 prunes, 2 tablespoons each of sesame seeds and desiccated unsweetened coconut in the bowl/jar of a food processor or high powered blender.
  10. Grind to a coarse mixture, stopping in between to stir and check the texture.
  11. Taste and check for sweetness. If needed, add jaggery powder. I have added 4 tablespoons to get the sweetness my family loves. You can add start adding just 2 tablespoons and if needed add more.
  12. When the mixture is ready and forms a sticky mass, remove into a bowl.

  13. Make equal sized balls and enjoy immediately or chill in refrigerator and enjoy!
  14. For more variation, roll the balls in either toasted sesame seeds or coconut powder.

  15. Coated in melted chocolate (especially healthier dark chocolate) sounds amazing too!

Recipe Notes

  • Adjust the amount of jaggery according to personal taste.
  • Use any mixture of nuts/seeds you like or have
  • If you cannot find or like prunes, then use only dates.
  • Instead of jaggery, you can use any sweetener of your choice like maple syrup, honey, date syrup etc.
  • For more peanutty flavor, feel free to add a tablespoon or two of peanut butter.
